Cucumber and Israeli Couscous Salad

I love this tabbouleh-like mixture because of all the herbs and refreshing flavors, and also because of the nice contrast in textures. Make sure that you cook the couscous until the spheres are tender but not gummy. I have seen package directions that call for too little water; make sure you cook them in twice their volume of water.

Greek Black-Eyed Peas Salad

Black-eyed peas may not be part of the Greek New Year’s tradition, as they are in the American South, but this recipe still makes a great, light dish.

Crunchy Burmese Ginger Salad

Many Burmese dishes carry the scents and flavors of neighboring India and China. In this salad, the dried shrimp of Yunnan, the part of China that borders Myanmar, mingle with crisped shallots, tangy lime and crunchy roasted peanuts for wild contrast and crunch.

Shrimp, Mark's Way

This recipe comes from a spring holiday dinner party that Mark Bittman and Sam Sifton prepared in Charleston, S.C. Cook the shrimp on the stove with olive oil and paprika, salt, pepper, garlic and lemon, and serve them as an appetizer with salads.

Tempeh and Wild Mushroom Fricassee

If there is such a thing as a stick-to-your-ribs vegan meal, this is it. Loaded with four types of mushrooms and chunks of tempeh sautéed in white wine and soy sauce, it is hearty fare perfect for chilly autumn or winter days. The recipe came to The Times in 2010 when the Well blog featured a number of vegetarian recipes from Cooking Light magazine.

Gluten-Free Pumpkin Dumplings With Radicchio

Silvana Nardone, the founding editor of the food magazine Every Day With Rachael Ray, developed this recipe for her gluten-intolerant son. It's incredibly easy. Just mix together a can of pumpkin purée, a couple eggs and a cup of gluten-free flour blend. Plop spoonfuls into a pot of boiling water, and in minutes – dumplings. Toss those with a quick sauté of onion, red pepper flakes and radicchio for a filling, healthy dinner. The dumplings are super light and pillowy, but if you prefer a firmer texture, add more gluten-free flour, 1 tablespoon at a time, to the pasta dough.

Persimmon Salad with Pomegranate and Walnuts

Persimmons make a colorful cool weather salad, combined with dark red Treviso and radicchio leaves and glistening ruby-like pomegranate seeds. Walnut oil and shallots give the vinaigrette an earthy flavor, accentuated by caramelized walnuts with sea salt. You need the small apple-size Fuyu persimmons, which are delicious eaten raw. (The pointy Hachiya persimmons need to ripen to softness and are usually cooked for cakes or puddings.) Make this throughout the fall and winter. If persimmons are unavailable use pears, Asian pears or crisp tart apples.

Spring Rolls With Spinach, Mushrooms, Sesame, Rice and Herbs

I steam the spinach just until it collapses for these rolls and combine it with rice instead of the more traditional noodles. You can use brown, regular basmati or jasmine rice
