5-Ingredient Jewish Asian Cabbage Soup

Tongue in cheek. I had a very small green cabbage in my refrigerator that was begging for some attention. A few weeks ago I made some delicious chicken stock in which I had added a 2-inch nugget of fresh ginger. For months I have been making foxesloveslemons' Korean meatballs and therefore had an ample supply of Gochujang sauce. Armed with these three main ingredients, I made a delicious cabbage soup in a matter of 30 minutes. The cabbage and chicken stock make up the Jewish part of this recipe - the Gochujang sauce and soy sauce the Asian. This is quick, with a spicy and hot undertone balanced by the sweetness of the raisins. This soup makes a great lunch or a good first course.

Bitter Clementine Orange Marmalade

I have several friends who love bitter marmalade, including my spouse. This recipe has met his approval because I used a local favorite rum that adds just a slight punch. The more orange peels used, the more bitter the marmalade. I like to use two thirds of the peels, which adds just enough bitterness to the marmalade without overpowering the sweetness. Use a rum of your choice - I used Mad River First Run Rum.

Makes 5 to 6 half pints of marmalade

My local market is bringing on the most lovely watermelon radishes and celery root (celeriac). Roasting butternut squash with the radishes and celery root creates wonderful, caramelized flavors of sweetness, freshness, and a tangy bitterness. The preparation couldn't be easier, and the three disparate tastes create a combination of flavors that are refreshing and surprisingly good. When you cube the vegetables, try to keep their size uniform.

Recently I have found that cooked vegetables filled me up more and were equally satisfying for lunch as a salad, so I have taken to alternating my lunches between a cooked veggie and and raw salad. I also have to take a minimum amount of time for lunch, so I rustled up this quick prep with minimum fuss. I like my baby bok choy to be both crunchy and soft, so I use the entire leaf, including the plumper white stems.

BLT Wrapped Bites with Feta Cheese

I love cherry tomatoes and especially love the varieties available. With a box of cherry heirlooms, this preparation came to mind. The trick was to come up with a bite that would be easy to prepare and not wind up on everyone's laps or my floor. Serving the bites enveloped in romaine lettuce leaves makes it easy for eaters to wrap up the filling, and enjoy the feeling of a BLT. I prefer using feta cheese to blue cheese or chevre - blue cheese will be sharper in flavor; chevre milder.

A Southern Californian and a nurseryman, a great cook, and an all around entertaining patriarch, Frank had a way with food that is admirable - simple but good. His daughter, Dot, taught me this recipe, to which I have added chicken and a little extra kick to the enchilada sauce. I was inspired to submit it after a Hotline question summoned a call for enchilada recipes. Frank made me the first enchiladas I ever ate.

One of my new year's resolutions is to get back into Nutella, but I want to disguise it as a healthy ingredient whenever possible. A smoothie with fresh orange juice and non-fat Greek yogurt works well with a touch of the Magic Stuff. The orange juice and Greek yogurt provide a nice, tangy counterpoint to the Divineness formerly known as Nutella. Use any variation of "Nutella" that you have on hand.

Apple, Carrot, and Parsnip Soup

I know there are dozens of root soup recipes on this site, but the happenstance nature of this soup's creation prompted me to encourage others. I made a roast chicken earlier this week, and after 3 days of leftovers there were still a few roasted carrots left in the roasting pan. I combined these, a few roasted garlic cloves that were hiding in the cavity of the chicken, and a few more carrots and a parsnip from the fridge. A half apple was sitting on the counter, and so that and another whole apple got thrown into the mix. In this photo I added a hodgepodge of inclusions - Dukkah, pepitas, AND some parmesan cheese. But the soup is really good on its own.

Quick and Easy Salmon

The ingredient that prevails in this recipe is maple syrup. We still reap the benefits from my grandfather's old sugar bush in the Northeast Kingdom, so maple syrup is a constant presence in our kitchen. Combined with wine and lemon juice, the resulting cooking liquid is glaze-y and nice to spoon over the salmon. This is a no frills dish that makes a great, simple dinner with a veggie and a nice baked sweet potato.

I have made a cranberry sauce with rosemary from Fine Cooking for years. Today, with a batch of fresh, local cranberries, I decided to change up the recipe to include pear brandy, although I suspect apple brandy would taste just as good. I used lemon zest to brighten up the sauce, and I am happy with the brightness and fresh taste. Hope you agree!

I now make chocolate bark the Ina Garten way - by melting the chocolate in the microwave in 30-second increments. It's easy and makes the job seem effortless. This is a great recipe to make with kids. They can participate in every step of the process. I stuck to a red and green theme for this batch, with a few recommendations for other healthy red/green toppings. As the holidays approach, I am looking for easy treats to assemble and this bark fits the bill! This is great to serve along with some ice cream or fruit. And it makes a great food gift.

Ode to My Apple Tree Kale Salad

After a 3-year fruit drought, our apple tree produced a bounty of fruit this year. Our apples may not be the most gorgeous you have ever seen, but they are firm, sweet yet tart, and wonderful for baking, making sauce, and eating. I have made countless apple crisps this season, lots of applesauce to freeze, and an apple a day goes into every salad I assemble. The skin is mottled and barely presentable to the consumer's eye, but I love love love that we have a tree in our yard that is giving us such a gift. My other love of this season is local kale that is crisp and just screams healthy. Every day for weeks I have made a kale salad for lunch, puffing up my chest while thinking of the nutritional density of this glorious vegetable. This salad is meant to give my two loves equal billing, with just a little crunch of nut and a sprinkle of cheese to complete the taste.

Applesauce Plain and Simple

We usually have a roast chicken every 10 days or so from October through April. It would be unthinkable to serve the chicken without applesauce. Vermont has an abundant source of organic Macintosh apples, and so I am able to prepare applesauce without worrying about peeling the apples. The end result is a beautiful pink sauce, with only the addition of a bit of honey and cinnamon to enhance flavor. And, sometimes, not even cinnamon is necessary! PS> Great for latkes, any kind of vegetable pancake, and mixed with cottage cheese or sour cream!

Root Gratin

This side has appeared on our Thanksgiving table for almost 35 years, and is a favorite of adults and kids alike. Linda Olney's recipe, included in the Time Life Good Cook series, is the inspiration for this dish that I have tweaked to be more appealing to the crowd that professes a dislike of turnips. Salting the vegetables prior to assembling the recipe leeches the bitterness out of the roots, and the substitution of Ritz cracker crumbs to top the gratin adds a delicate sweetness. - Bevi
