Spiked Chunky Monkey No Churn Ice Cream
So I started with Nigella Lawson's No Churn Ice Cream Recipe (my new obsession), but instead of coffee, I went with bananas and chocoloate chunks because Chunky Monkey is my favorite Ben & Jerry's ice cream flavor. Oh, and I added booze on account of everything being improved with a shot of whiskey. I might have used bourbon instead of Jameson's, but I didn't have any....but feel free to use whatever delicious tipple suits your fancy!
Blackened Honey-Glazed Sweet Potatoes and Carrots
It doesn't get any easier than this. And it doesn't take up valuable oven real estate during the Thanksgiving rush. This blackened sweet potato recipe is divine.

Two-Ingredient "I Have No Time for Dinner" Green Enchilada Chicken
I feel slightly naughty putting 'this' type of recipe on here. Seriously? Two ingredients? From a CAN!?! I feel like I should turn in my foodie card (along with my Aleppo pepper, microplane grater and my great-grandmother's brisket roasting pan). I feel like the Canal House will call me up and cancel my subscription on principle. But I'm doing it anyway. This is seriously the easiest and best tasting chicken recipe that I've ever made that can be executed flawlessly every time AND can be done during soccer season. On a Tuesday. When one child has strep. And the husband is TDY. Born of desperation, a lack of anything resembling fresh ingredients in my fridge and an alarming lack of pride on my part. High gourmet food this is not. But it tastes great and is a snap to slap together. And if your life is anything like my life it will quickly turn into a mid-week staple.

Tummy Soothing Smoothie
Tummy Soothing Smoothie recipe made with ginger & mint disguised in an attractive fruit smoothie. Because I failed at getting my children to take pepto bismol.

Roasted Cauliflower with Walnut Oil and Toasted Cumin
In this recipe, roasting the cauliflower coaxes a nutty flavor out of the vegetable which the walnut oil amps up. The toasted cumin seeds give it a little snap.
