Quinoa Tabouleh
Who would not love a nutritious and deliciously refreshing salad like this? This is my take on classic Tabouleh that I serve with grilled meats as a side dish or have it on its own for a light lunch. It is a great bonus that it can be prepared in advance and kept in the fridge for up to 3-4 days. All you need is quinoa, tomatoes, cucumber, parsley, mint, olive oil, and lemon juice.

Meat Stuffed Marrows/Zucchinis (Dolma)
This recipe is basically based on the idea of stuffing your vegetables with your filling, so you can improvise if you wish. In Turkey it is called "Dolma" which means "stuffed". Traditionally we use marrows, peppers, aubergines and beef tomatoes back at home. As a warm dish, the filling is minced beef mixed with a little bit of rice and herbs and seasoning. Serve it with garlic yoghurt.

Whenever we need an uplifting, nutritious, and easy snack to make Houmus is my first choice. This recipe is packed with protein, high fibre, and good oils.

Black Garlic Roasted Asparagus
Black garlic has soft cloves of dark brown, almost black in color. The flavors are deep, almost caramelized with a wonderful sweet-sour balance. It gives sulphurous asparagus a strong umami kick with a hint of aged balsamic and a smoked taste. Roasted asparagus can be served as a side dish with chicken, or on a bed of pasta for a light supper; topped with grated parmesan. if you blanch the asparagus before roasting, this will enhance their color and taste.

Mediterranean Roast Vegetables Pasta
Lovely Roast vegetables infused with herbs and garlic can be enjoyed on a bed of pasta or couscous, drizzled with balsamic vinegar and extra virgin olive oil. This makes a healthy and practical supper dish.
