Chickpea Soup with Rosemary

This is really simple, delicious and inexpensive. I believe I originally saw this in a La Cucina Italiana about 10 years ago aptly titled Zuppa di Ceci. I have been unable to locate the original recipe. This is my version adapted to my own tastes and using standard US can sizes.

Serves 2 as a main 4 as a side

Green Beans + Chestnuts Sauteed in Duck Fat

Every year we celebrate my friend Jayme's birthday with French bistro themed meal. Two years ago I attempted duck confit. Two auditions later I had a lot of duck fat and no main course. I punted and planned to make rack of lamb and daupinoise gratin. But what to serve as a vegetable? I got really hung up on this. Artichokes, too messy. Asparagus, uninspired. Brussels sprouts, last years news. Spinach, wrong texture. Broccoli, yawn. Zucchini, bigger yawn. I wanted green beans but not just regular old green beans or even green beans almandine. Wait, green beans almandine, then it popped into my head ‘What about green beans with chestnuts?’ Then it grew ‘What about green beans with chestnuts sauteed in the leftover duck fat?’ It has been a regular visitor to our table ever since. And as one guest said at the end of the birthday dinner 'Morgan, I'm convinced everything should be sauteed in duck fat.'

I came up with this when trying to dispense of a whole watermelon that was consuming way too much real estate. It's so easy I'm not sure you can even call it a recipe but it's refreshing, it tastes like summer and it gets the job done. - Summer of Eggplant

Raspberry Lambic Float

This comes from my friend Danny. My friend Danny who hates dessert. Several years ago we used to have these Iron Chef offs. Four of us would each make two dishes in amuse bouche form. Then we invited two friends to be our Jeffrey Steingartens. They would blind judge and deem someone the winner. I don’t think Danny won for this dish but he should have. I recreated this recipe last summer when having my annual girls, weekend with my god-daughters (I made theirs with raspberry soda). The picture is a larger format then what the recipe calls for.

Sauteed Parsnip Ribbons with Nigella Seed

A few weeks ago I needed nigella seeds for a recipe. They only came in a giant bag. I didn't want the bag to languish only to be used the 3x a year when we make Indian food at home. I wanted to find another use for them besides the traditional ones. Additionally, I love vegetables in ribbon form, rutabaga, asparagus, carrots, zucchini, you name it.
