Chacarero -The Chilean National Lunch Solution

Although the most traditional Chilean dish is probably empanadas, more popular and more widely available are chacareros, a type of sandwich that Chileans eat for breakfast, lunch, or any other time they feel a bit peckish. Chileans buy these sandwiches – the most famous ones are the chacarero, the barros luco (meat and cheese) and the barros jarpa (ham and cheese) – in schoperías, little corner restaurants. They use 'French' bread for these, often in the form of buns, but you can use baguettes, hamburger buns or similar. As for most South American recipes, the important ingredient is the meat - everything else is decoration, mostly.

Shelled dried broad beans and chicory balls

Dried broad beans pureè and chicory is a typical south italian single-course meal, because chicory is everywhere in the countryside, and dried broad beans replace meat in the farmer's diet. If you make balls with it you totally win.

Taiwanese Turnip Cake

I've seen the 2 generations of women in my house making turnip cake with their eyes closed, as I, myself, now living abroad, often miss my mom's turnip cake- steamed, sliced and pan fried until crispy on the exterior and bursting of daikon deliciousness in the middle. This recipe focuses on the shredded daikon, so try to buy fresh daikon: no additional cornstarch needed, nor chinese sausage, shiitake mushrooms etc. The secret? Letting the mixture sit overnight. Can be kept in the fridge up to 4 days.

Orzo and eggs

So, it's late at night, you just got home, you're tired, you're hungry, most of all you're lazy, but you don't really have much to cook with. That was how I felt when I came up with this recipe, but with just a few ingredients that you most likely already have (because who has time to go to the store), you could be eating a delicious meal in a half an hour. This is so easy, you will be unhappy forever if you order take-out instead.

A sage and honey walnut milkshake (with vegan option)

Looking for a new flavor this recipe puts an earthy, savory spin into a traditional buttermilk drink. For a vegan option you can sub almond milk with a splash of cider vinegar for the buttermilk, which will get some tanginess.

Poppa Hy's Matzoh Brei

My Poppa Hy was a fabulous dancer, a dress designer, a card shark, a wonderful grandfather, and he made hands down the greatest matzoh brei ever. Saturday morning breakfast was the highlight of every weekend visit. He would come home from temple, change his clothes make coffee in their old fashioned percolator and slowly and methodically , start making matzoh brei. We would sit at the table waiting for each pancake to arrive, cut into 8 perfect slices. I like 3/4 of mine with salt, pepper and cottage cheese, and the last with wedge with maple syrup, my brother goes for maple syrup and blueberries. Poppa Hy had a magic pan which is currently in my cousins possession, though that is in negotiations.
