Sometimes things that you hate have a funny way of growing on you in an addictive manner. Once I got over my unfortunate introduction to Hachiya persimmons (The first time I tasted it, bit into a bright colored but inedibly tannic fruit that put me off it for a long time), My first instinct was to incorporate it into a lassi since to me the flavor & texture was reminiscent of the ugly brown Sapota fruit (that we called 'Chikoo' in hindi) My mother would blend the odd overripe chickoo with fresh yogurt & lots of ice and serve it up as the perfect drink for a hot Mumbai Summer afternoon. I like to blend the pulp with yogurt and a touch of chai spice.

When braising season began, I cooked two sizable lamb shanks and, of course, enjoyed them. Home made spiced Paneer

Tongle tickling variation on the regular Paneer. You won't find this flavor in any store bought brick! I first tasted this Paneer (Fried into a Pakora) at Chef Vikas Khanna's restaurant Junoon. The flavor induced such an AHA moment and Chef Khanna was gracious enough to mention that the Paneer was made from scratch everyday at the restaurant. Not sure what other spices went into the Junoon Paneer, and quite frankly, I did not ask,I preferring to create my own version. Pepper & coriander were definitely in the cheese. Feel free to adjust the amount of spice to your personal preference

Aam Ras with Puri

Aam Ras and "Puri" is nothing but ("Aam") mango ("Ras") puree with fried Indian flatbread. You need nothing because mango puree itself justifies everything. For a little salty spicy kick eat it along with some nice Mango pickle. We would have this as lunch or dinner most of the times during summer season. Sometimes my mom would make some "Rasawala Alu" potatoes in gravy as a side dish to go with the puris. Yum! when we serve Aam Ras, we top it off with a pinch of salt and cumin powder (totally optional) and just a tsp of ghee, yes ghee. And, should I say how to eat it. Just dip your puri in the aam ras and let your spoons enjoy themselves in the cabinet and allow your fingers to get messy.

Chai spice blend

There is no single formula for Chai spice. it varies from brand to brand & home to home. Indian Masala tea comes in many many flavors and every one of them is deliciously unique. From a simple addition of smashed fresh Ginger root & crushed cardamom to complex blends incorporating a dozen spices.. My preferred method of ginger root & cardamom only gets me so far as a cup of chai, so I cobbled up a mix of 5 spices (inspired by Chef Raghavan Iyers newly launched line of spices, turmeric trail).. While its near impossible to decipher the exact proportions of the spices used in the commercial version, I used the list of ingredients on the package to come up with my own. Its been through a rigorous set of testing on regular spiced chai as well as experiments with hot chocolate , a version of chai spiced shortbread, and my thanksgiving apple and pear pie!. The flavor of the blend is pretty intense and all you need is about 1/4 th of a tsp for a strong cup of chai or chocolate. Classic case of a little goes a looong way. Its not worth making larger quantities unless you're planning to make industrial amounts of tea.
