Roasted Tomato Sauce

Italian Heirloom Salad
I use to know some very sweet Italian people in Dallas Texas many years ago and this was one of the dishes I learned to make from Momma Katrina where I spent many Happy hours cooking and eating in her kitchen.

Vegan Pesto with White Miso and Smoked Salt
A wonderful classic basil pesto for vegan guests. If you soak the pine nuts overnight it gives a creamy effect. White miso gives depth of flavor and the smoked salt is a marvelous addition.

Basil and Chevre Baked Tomatoes
Years ago we had an appetizer at Hudson's on the Bend here in Austin that was an heirloom tomato stuffed with herbed goat cheese. We recreated it at home and make them often for a side dish with an abundance of our fresh garden tomatoes.

Grilled Tomato with Basil and Garlic
A very simple appetizer I threw together based on a daily garden harvest. Summertime goodness. Adjust the quantity of ingredients as to personal choice.

Sunny Side Up with Basil
I grew up in Greece. Basil is everywhere! My grandmother would make this for me at least a few times a week. Not only did we have fresh basil we had fresh eggs from our chickens! I think of my childhood and my grandmother every time I eat eggs with basil. Make sure you have a slice of bread to mop up the yummy olive oil!

easy caprese
This is a great way to make caprese that is 'finger food' - it also holds up well at potluck events and is great for vegetarians. Nice thing about this is that you can be as fancy or as basic as you want. Sometimes you may want to cut the grape tomatoes and mozzarella in half when assembling the skewer - putting the cut side towards each other with a piece of basil in between.

Basil, Mozzarella and Tomatoes
It is all fresh.
FRESH TOMATO-BASIL SAUCE "COOKED" BY THE SUN
Minimal is one of my favorite words on a hot summer day. That is when I pluck a few heirloom tomatoes from my garden and mix them with fresh basil also right out of the garden. The sun ripened tomatoes plucked out of their garden nests taste like they have continued ripening for maximum flavor . The basil, the only herb used, adds the starring flavor burst. Together they smell and taste like summer!

Artichokes Baked with Mozzarella
This original version of this recipe calls for frozen baby artichokes or fresh artichokes. I used a combination b/c I realized I did not have enough fresh

Mozzarella tart
summer tomatoes from the garden and fresh mozzarella were my inspiration

Quick mozzarella pizza
instant insalata
This salad is probably my favorite, especially this time of year when the tomatoes are ripe an juicy. It is also the easiest. It is light but filling, packing in lots of calcium and vitamin C. Plus, if you grow it yourself you get a little extra satisfaction. I know I did! There is nothing like watching your herbs and veggies grow, picking them at their peak, and then getting to enjoy them just a few feet from where they started as seedlings. Not to mention what you save on the grocery bill!

Jamón Ibérico Panini
When making this Jamon Iberico Sandwich recipe, do your jamón justice by using very fresh bread and the nicest sweet butter you can find. Enjoy!! ;o)
Negroni Spritzer
It was love at first sip for the Negroni and me. This is a delicious, refreshing drink that I thoroughly enjoy anytime. This negroni spritzer recipe is divine!

Peperonata With Capers

Chocolate Italian Wedding Cookies
No one knows how or why the cookie table became a wedding tradition in Pittsburgh. Some believe the Italians started it, others the Europeans and many theorize it began during the Depression when wedding cakes weren't as common; Guests contributed cookies so the expense of an elaborate cake didn't fall on one family. Regardless of the provenance, for as long as anyone there can remember, wedding receptions have featured the tables, laden with dozens of homemade old-fashioned offerings like lady locks, pizzelles and buckeyes. These lightly-spiced chocolate-walnut cookies, part of the spread at Laura Gerrero and Luke Wiehagen's Steeltown wedding in 2009, are topped with a simple confectioners' sugar glaze and chocolate sprinkles.

Sweet and Sour Winter Squash
This dish is based on a Sicilian recipe that I learned from the food writer Clifford A. Wright. The sweet and sour flavors are typical of Sicilian cuisine, though I have changed the technique used in the authentic version, which entails sautéing the squash in a lot more oil.

Italianissmo Limoncello Panaché
In France, a panaché is a drink served in summer made from a mix of beer with lemon-flavored soda like Seven-Up or Sprite. This makes for a refreshing drink.

Grilled Taleggio cheese, Salami and Truffle Honey - Crostone di Taleggio, Salami con Miele Tartufato
For this recipe, use Italian bread and truffle salami don't hesitate - the difference is amazing. I make my crostones with Taleggio cheese instead of Fontina.

Pasta With Beans and Mussels

Salsiccie con Uova
This salsiccie con uova recipe is a nicely balanced blend of sweet, sour, and savory. Serve this over shaped pasta, such as campanelle, chiocciole, or fusilli.

Zuppa Arcidossana

Risotto With Asparagus, Fresh Fava Beans and Saffron
Fava beans top my list of spring favorites. The 15 minutes that it will take you to shell and skin these high-protein, high-fiber treasures is time well spent, because their season is, sadly, a short one. A warning, though: fava beans are toxic to individuals with favism, caused by an inherited blood enzyme deficiency. Be cautious when trying fava beans for the first time.
