Grilled Steak Tacos With Cherry Tomato-Avocado Salsa
In this supremely summery taco recipe, chile-rubbed grilled steak is topped with a spicy tomato-avocado salsa before being rolled into warm corn tortillas. Grilling the onions, garlic and jalapeño for the salsa adds a concentrated sweetness, while lime zest keeps everything sharp and bright. If you don’t have access to a grill, feel free to use your broiler.

Isla Flotante (Floating Island) or Torta en Leche (Cake in Milk)
A holiday dessert from the state of Tabasco in southeastern Mexico, this isla flotante, or floating island, makes a wonderful torta en leche, cake in milk.

Tomatillo Salsa
This Salsa is Spicy and full of charred Tomatillo, Lime and Cilantro flavor with a little crunch added by diced White onion. Taking only 10 min to make from start to finish this one is easy.

Hartwood Restaurant's Roasted Chili Oil
We use mild Cascabel Chiles for our chile oil recipe, which give it a pleasantly toasty, smoky flavor. Look for them in a Mexican market or online.

Citrus Marinated Skirt Steak
Easy citrus marinated skirt steak recipe that I use to make delicious fajitas at home. The marinade makes these skirt steaks tender, juicy, and flavorful. The marinade takes minutes to make and the skirt steak only takes minutes to cook after marinating the steak. I throw some peppers in the frying pan after I finish cooking the skirt steak and my fajitas are complete.

CRISPY TORTILLAS W GUAJILLO CHOCOLATE SAUCE
Mexican-inspired chocolate recipe using some of my favourite stone-ground staples.

Strawberry Margarita on the Rocks
We love a fruit cocktail made with real fresh fruit. This recipe for a strawberry margarita on the rocks uses real strawberries and no sweet and sour mix.

The Nor Cal Margarita
The Norcal recipe: A simple, refreshing take on a classic Margarita. This drink is a cult favorite in Paleo and Crossfit circles, but everyone will love it!

Watermelon Margarita Granita
This recipe was a happy accident. I had originally intended to make a sorbet. But, due to the unfortunate combination of high sugar and alcohol content, it refused to freeze in my ice cream machine. So I poured the whole thing in a pan and let it freeze, granita style. And, in the end, it's simply delicious!

Minted tomatillo salsa
This recipe is a simplification of a recipe published by Sue Torres in The New Greenmarket cookbook. When I ran across the recipe I was intrigued by putting mint in tomatillo salsa. Mint and tomatillo are a fresh and delicious combination. My method and ingredients are different that Sue Torres', but the flavor combination was inspired by her. I roast the tomatillos and keep it ultra simple, just tomatillos and mint. This salsa is delicious on chicken tacos.

Scrambled Egg Tacos With Avocado
I make these scrambled egg tacos late and often—this is my back-pocket 10-minute recipe after a very long day or a longer party. The avocado is delicious.
Acorn Squash Burritos
When making a burrito, the quality of the tortilla is important. We get ours at the tortilla factory a couple blocks away--it's a small family owned restaurant, but of course most people aren't that luck, and there are those nights when we don't plan ahead and have to use tortillas from the grocery store. The end result is also affected by the quality of the salsa; use your favorite, homemade if possible. This isn't so much a recipe as a fortunate combination that came about with leftovers (the squash and seeds were already roasted and the salsa made) and a need for lunch.

Unbelievably Quick Black Bean Soup
If you're looking for an incredibly fast yet delicious soup, look no further. Instead of chopping and cooking all the ingredients for traditional black bean soup, use a jar of salsa instead, preferably fire-roasted. Chile Con Queso
Hot, spicy dip, great for party or football watching. Pair with your favorite tortilla chips. Delicious and fun to serve at Christmas with the red of the tomatoes and the green of the chilies.

Super (Bowl) Chicken & Black Bean Nachos
Pop this Super Bowl chicken nachos recipe in the oven during the pregame show, and let me know how much is left (if any) when halftime rolls around.

Tortilla Soup With Roasted Cauliflower 'Rice'
This is not exactly authentic, but I wanted to add a vegetable to my tortilla soup, to make it more of a dinner in a bowl, so I decided to shave cauliflower, toss the ricelike pieces with oil and chili powder, and roast it. I loved the addition of the spicy roasted cauliflower to each bowl of soup, along with the tortilla crisps that I toasted in the microwave rather than frying. You can make this soup even more substantial by adding eggs (see the variation that follows the recipe).

Fideo Soup
This recipe for fideo soup, or sopa de fideo, is a savory and comforting Mexican noodle soup, made with vermicelli pasta and cooked in a tomato broth.

Summer Tacos with Corn, Green Beans and Tomatillo Salsa
Another way to use the versatile green bean in summer cooking. Cut into one-inch lengths and add to a mix of corn, chiles and green tomatillo salsa. Green beans are such a reliable and versatile summer vegetable. I serve them on their own, of course, but I also throw them into various pasta dishes and salads, and here I’ve used them in a taco filling. Cook the beans first, just until tender, then cut them into one-inch lengths and add to this sweet and spicy mix of corn, chiles and green tomatillo salsa.

Tangy mango salsa
Mango and bell pepper salsa
Addictive Avocado Salsa.
In Austin there are many versions of creamy green salsa served with tacos. Traditionally, jalapeños are blended with oil to create the creamy texture. In my version, avocado replaces oil and lends a new flavor to an old recipe. Next time you make your favorite tacos, serve them with some of this spicy Addictive Avocado Salsa.

Frozen Watermelon Margarita
What’s better than an icy cold slice of watermelon on a hot day? An icy cold frozen watermelon margarita! Allow at least 30 minutes to freeze the watermelon. Or, if you want to prepare ahead of time, freeze it for up to 24 hours before you assemble the cocktail.

Grilled Cactus Paddles (Nopales)
Nopales are the paddles of oputina (prickly pear) cactus, commonly found in Mexico. In this recipe, they are great grilled and taste a little like green beans.

Margarita
Tequila, lime, a touch of orange in the form of triple sec and salt (if that's your thing) is all you need to make a great margarita. No one really knows the true history of the cocktail — there are as many origin stories as there are variations of the beloved drink — but it's a practically perfect drink nonetheless. (Try a frozen margarita, too.)
