Mint and tomatillo are a fresh and delicious combination. My method and ingredients are different that Sue Torres', but the flavor combination was inspired by her. I roast the tomatillos and keep it ultra simple, just tomatillos and mint. This salsa is delicious on chicken tacos.

We get ours at the tortilla factory a couple blocks away--it's a small family owned restaurant, but of course most people aren't that luck, and there are those nights when we don't plan ahead and have to use tortillas from the grocery store. The end result is also affected by the quality of the salsa; use your favorite, homemade if possible. This isn't so much a recipe as a fortunate combination that came about with leftovers (the squash and seeds were already roasted and the salsa made) and a need for lunch.

This is not exactly authentic, but I wanted to add a vegetable to my tortilla soup, to make it more of a dinner in a bowl, so I decided to shave cauliflower, toss the ricelike pieces with oil and chili powder, and roast it. I loved the addition of the spicy roasted cauliflower to each bowl of soup, along with the tortilla crisps that I toasted in the microwave rather than frying. You can make this soup even more substantial by adding eggs (see the variation that follows the recipe).
