Mel's Red Hot Baked Wings
My mom has made these wings for years, but instead of wings, she uses bites of chicken, and serves in a bowl with a fork, swimming in juicy wing sauce. The sauce for these is fairly basic, but the technique is what sets them apart. Baked (not fried) these wings are seriously tender and good. The Franks hot sauce, melted butter, and brown sugar coating caramelizes on the wings, making them gooey, sweet, spicy, and chewy. Almost like chicken candy…is that weird?

Radish Crostini
My mother is responsible for turning me from a picky eater into an adventurous foodie. She made this for me once as a simple snack with radishes from her garden and farm fresh butter - it was a food epiphany for me. Radishes that fresh taste so peppery - the whole thing was heaven. Chicken Quesadillas With Avocado-Cucumber Salsa
There is one caveat when using leftover grilled meat. As the meat chills, the flavors recede, becoming quieter and mellower. For these quesadillas that I made out of Sunday’s grilled chicken thighs, shredded and stuffed into a corn tortilla with a little cheese and quickly toasted, I stirred together a lime-zest-imbued cucumber and avocado salsa that added a welcome citrus edge.

This is a great way to make caprese that is 'finger food' - it also holds up well at potluck events and is great for vegetarians. Nice thing about this is that you can be as fancy or as basic as you want. Sometimes you may want to cut the grape tomatoes and mozzarella in half when assembling the skewer - putting the cut side towards each other with a piece of basil in between.

It's a great way to use all that zucchini from the garden and it works well with green or yellow zucchini.

My Great Aunt taught me how to make this, so I'm guessing it is an authentic southern recipe! I like it most because you can stretch a few squash to go a long ways! It is also good with any of the squashes - but, my family prefers it most with yellow squash. Even my kids eat it.
