Smoked Trout, Avocado, and Arugula Sandwich
I came up with this sandwich on a night when I needed dinner that was fast, healthy, and full of protein. It is quick to put together, but tastes like much more than the sum of its parts! For the fish, I have used both Bar Harbor Smoked Kippers and Trader Joe's delicious version of the same (theirs is called Smoked Trout) -- I always keep some in the house for this kind of emergency sandwich need...

Chacarero -The Chilean National Lunch Solution
Although the most traditional Chilean dish is probably empanadas, more popular and more widely available are chacareros, a type of sandwich that Chileans eat for breakfast, lunch, or any other time they feel a bit peckish. Chileans buy these sandwiches – the most famous ones are the chacarero, the barros luco (meat and cheese) and the barros jarpa (ham and cheese) – in schoperías, little corner restaurants. They use 'French' bread for these, often in the form of buns, but you can use baguettes, hamburger buns or similar. As for most South American recipes, the important ingredient is the meat - everything else is decoration, mostly.

Quinoa & Pine Nut Salad
The first time I tasted this salad at a party it had walnuts in place of pine nuts and didn't have the avocado. I made it the original way a couple times but knew that there had to be another nut that would go better. I tried toasted slivered almonds (which was good, but not perfect) then I tried the pine nut AKA Pignolia. The flavors come together wonderfully! I would recommend making this at least a couple hours before you eat it so it can chill.
Addictive Avocado Salsa.
In Austin there are many versions of creamy green salsa served with tacos. Traditionally, jalapeños are blended with oil to create the creamy texture. In my version, avocado replaces oil and lends a new flavor to an old recipe. Next time you make your favorite tacos, serve them with some of this spicy Addictive Avocado Salsa.

Chicken Salad Stuffed Avocados
In my eyes anything with avocados is a WIN. Don't know what to do about leftovers, stuff it in an avocado, you can't go wrong :) This is an extremely versatile recipe, any leftovers would go GREAT!! Leftover chili? Can of tuna sitting in your pantry? Leftover salad or slaw? Leftover chicken --> chicken salad stuffed avocados. Add some Sriracha to give it a "kick" and you're in for a protein-packed treat! Made with greek yogurt, no mayo, no oil, but lots of great seasoning. The chicken salad included leftover organic roasted chicken I had done the Sunday night before. Feel free to adjust the ingredients, add more veggies, add more spices, add salsa & black beans for a tex-mex version! Endless possibilities! The PICTURE reflects my simple chicken salad made with a greek yogurt dressing, celery, roasted shallots and raisins.

Avocado ice cream
The texture of avocados makes for a smooth and rich ice cream consistency (with only a little cream, of course). Avocados love salt so don't forget to add a touch, even in this sweet recipe.
Avocado and Spinach Grilled Cheese
This grilled cheese recipe is all about the wonderful buttery slices of avocado that make this sandwich delectable. This sandwich also has fresh spinach.

Orange Avocado Carpaccio
Citrus helps bring out the avocados creaminess and cuts the buttery-ness. Super simple salad! When you DON'T want to wait for your avocados to ripen!!

avocado and egg salad
This avocado and egg salad is a perfect marriage of winter seasonality: ripe avocado and citrus. I first had this salad with a lemon picked off the tree in a backyard in Tel Aviv, an avocado from the Shuk ha Carmel and a creamy hard-boiled egg. Together with some salt and a fork, the ingredients blend together to form a delicious salad, spread, dip, or however you want to eat it. It can be spread on a piece of toast or eaten all by itself. If you really like lemon (as I do), I recommend adding an extra half lemon.

Grilled Avocado
This recipe is a copycat-ish version of a starter they serve at Mattei’s Tavern. It’s a great summer recipe because it’s healthy, it’s fresh and it’s delicious. Mattei’s serves this with fresh wasabi; if you have access to those kinds of riches then please, please share the wealth over my way.

Ramps on Toast with Poached Egg and Ajvar
When I opened up Bon Appetit's April issue and saw a beautiful, open-faced sandwich of sauteed ramps and a poached egg, I had to recreate my own version. This recipe is based on the BA sandwich but with key modifications -- namely, the addition of Serbian "ajvar." Ajvar is my absolute favorite condiment of all time and its smoky, sweet quality plays well with the charred ramps and the luxurious egg yolk of a perfectly poached egg. If you can't find ajvar, substitute goat cheese, harissa, tapenade, salsa, or other condiment of choice. Either way, try this while ramps are still available.

Avocado, Lox, and Pickled Onion on Crispbread
Take a classic bagel with cream cheese, lox, capers, red onions and just tweak everything a little bit and you get this. Except the lox. Don't tweak the lox. Lox is perfect just the way it is.

A Different Guacamole
This recipe is based on a version of guacamole I was once served at a Middle Eastern restaurant. It's become a staple ever since.

Chunky Avocado-Papaya Salsa
This is based on a recipe in Kim Sunée’s wonderful new book, “A Mouthful of Stars” (Andrews McMeel). Her recipe is more of a salad, a fusion of Thai and Mexican flavors. I loved the idea of combining avocado and papaya, two subtle, creamy fruits, with crunchy, bright-tasting Asian pears and spicy chiles. The first time I saw the recipe I wanted to test it right away, but I didn’t have Asian pears. So I used an apple, and loved it. It’s the sweet, crunchy fruit that does the trick, and apples and Asian pears both work. There are onions in the original recipe but I’ve made them optional.

Sweet Potato, Chickpea, Avocado, and Egg Sandwich
This sandwich is inspired by the sweet potato pate I ate at Vedge, a wonderful vegetable-focused restaurant in Philly.
