Unfussy Eggplant Parm
What if eggplant parmesan was more like an open-faced sandwich? To make the breadcrumbs, tear any bread into pieces by hand. This recipe uses the whole eggplant!

Grilled Corn & Ranch Pizzas
Corn, when grilled like this, gets chewy and inexplicably sweeter. Basil adds a floral note. But the real clincher is the masochistic drizzle of ranch dressing (especially Hidden "Vale/Dell/Glen/Geologic Window"), which picks everything up and works surprisingly well with the cheesy corn.

Wylie Dufresne's Soft-Scrambled Egg Grilled Cheese
Crank up the heat and whisk, finishing these scrambled eggs in about a minute. Melt in a generous amount of cream cheese for the creamiest of grilled cheese recipes.

Cheesy Quinoa Fritters With Arugula Salad

Homemade Queso Fresco in One Hour
I can’t believe you can make fresh queso fresco so easily. Why did I wait so long to try it? You can make this recipe so easily with just three ingredients.

Creamy Weeknight Macaroni and Cheese
Just as quick as the boxed variety, this creamy macaroni and cheese skirts the traditional butter and flour roux with assistance from cream cheese. While the cream cheese adds an important lusciousness, it doesn’t do the macaroni and cheese any favors when it comes to its flavor, so it’s important to use the sharpest, tangiest Cheddar you can get your hands on. For perfectly coated noodles, make sure to cook the pasta in the sauce for a minute or two.

Overripe Banana Pizza
This banana pizza recipe happened by accident. The bananas were overripe, squishy and sweet, but not yet fully brown, so I brought them to a pizza making party.

The Asparagus your dreams wish they dreamed about.
Actually there's not much to tell. It's supppppper simple, and cheap and wildly inspired by a Frank Prisinzano Instagram post. Hahaha!...No, seriously tho.

Classic Lasagna
While not a 30-minute meal, this lasagna is quicker and more straightforward than most. If you’re in a real time crunch, use your favorite jarred red sauce. For greater success with the lasagna noodles, which have a tendency to stick together, boil them in the largest pot possible or work in batches — they need as much water as possible to move freely so they don’t clump. This lasagna can be assembled, baked and refrigerated up to five days ahead, or frozen up to a month ahead if wrapped tightly.

Melissa Clark’s Stovetop Mac & Cheese
In, oh, about 15 minutes—you could be staring at a big pot full of mac & cheese, with all the ease of cracking open a box and shaking out the foil packet. But instead of noodles in a slurry of cheese-ish dressing, these will be hugged by a truly gooey, molten cheddar sauce that tastes like real, sharp, salty cheese. Cheese cheese. Recipe adapted very slightly from Dinner: Changing the Game (Clarkson Potter, 2017). To get the full story, head here.

Pimento Mac n’ Cheese
This creamy mac and cheese recipe includes pimento peppers and cheddar. It's inspired by the classic, and comes from Honey Butter Fried Chicken in Chicago.

Kabocha Squash (Japanese Pumpkin) Braised in Milk
This Japanese Pumpkin braised in milk is a recipe that you could imagine in a lunchtime bento box or as a side dish to some grilled salmon or roast pork.

Cobb Salad
While the origins of a Cobb salad are still up for debate, what goes into one is fairly absolute: tender chicken breast, tangy tomatoes, perfectly hard-boiled egg and, perhaps most important, crispy bacon. This classic version relies on crumbled blue cheese and ripe avocado for creaminess, rather than a cheese or buttermilk-based dressing, making way for a mustardy shallot vinaigrette. The way each of the ingredients is prepared will depend on personal preference: Are you a chunky, chopped salad kind of person? Or do you prefer your lettuce torn and tomatoes sliced? Here, the torn and sliced approach is taken for a more elegant visual, but feel free to make it your own. It also halves nicely if you're cooking for two.

Cacio e Pepe Con Ricotta
The idea of adding a puddle of ricotta on your cacio e pepe comes from Sora Margherita, a Roman-Jewish restaurant in Rome that's been around in the 1920s, and likely hasn't changed much since then. The cacio e pepe base recipe is inspired by one in Katie Parla and Kristina Gill's Tasting Rome, which comes from Leonardo Vignoli.

Warm, Cheesy, Baked Gnocchi
This recipe requires only a little chopping, crumbling, or even patience. But the most fascinating step this recipe lacks? Mixing. This baked gnocchi recipe eliminates one crucial step that’s key to a solid baked pasta: mixing the sauce in. Where pasta starts to dry out immediately after being strained, the gnocchi does not.By carefully spooning the sauce atop our potato puffs and not mixing, here is what happens: pockets of tomato sauce form in every nook and cranny of the baking dish. Some sections will even caramelize and acquire a deeper tomato flavor. The gnocchi will absorb some of sauce, but most will rest untouched. The best part is that every now and then, you’ll drag a gnocco through the sauce and discover a surprise.
Whey Caramel
The whey caramel recipe results in a smooth, thick, and tangy caramel, with a viscosity similar to a heavy molasses. Perfect for using in baked goods.

Chaas (Savory Spiced Buttermilk)

Eggs Kejriwal
This spicy egg-and-cheese on toast has its roots in the social-club circuit of Mumbai, though chefs in London, New York and Oakland have riffed on it recently, too. The dish is quick and simple, ideal for breakfast or a hearty snack between meals, and can be customized with a variety of cheeses and toppings. To make this updated Eggs Kejriwal, toast good bread and smear it with mustard, then pile on some grated cheese mixed up with chopped up green chiles, red onion and cilantro leaves. Once the cheese is bubbling under the broiler, just slide on a fried egg.

Kohlrabi Fritters with Meadow Parsley
The sweetness of kohlrabi goes well with the bitter onion-parsley and flavour of the meadow parsley in this fritters recipe. Use potatoes and eggs, too.
