Tumble avocado in a food processor with ginger, for a subtle sweetness and restorative sting; soy sauce, standing in for salt but rounder and deeper; toasted sesame oil, earthy and plush, making everything it touches more intensely itself; and edamame, for body (and protein). Then stir in yuzu, a citrus that’s sweeter and gentler than lemon, lending a sherbety tang, and light where avocado is luscious. (If you don’t have any on hand, try squeezing together lemon and clementine.) A dose of sambal brings a throb of heat, if you like, while a dusting of furikake adds crunch. Ms. Bhogal serves the dip on toast at her restaurant, but you can dispense with the formality of framing it as a meal and eat it straight, dunking the likes of carrots, radishes, tortilla chips and Thai prawn crackers.

Variations of coconut fish curry abound up and down the Swahili Coast, so much so that the dish is often broadly referred to as East African fish curry. Although Somalia has the longest coastline in mainland Africa, seafood is not a prominent part of mainstream Somali cuisine. But you’ll find malaay qumbe in coastal Somali towns. This version of coconut fish curry leans heavily on xawaash, a spice blend that is at the heart of Somali cuisine. The mild heat from the xawaash’s black pepper balances beautifully with the sweet, cooling coconut milk and the acidity from the tomatoes. Serve over plain white rice, or soak up the creamy coconut gravy with a flatbread like muufo. Malaay qumbe would also work well on top of soor for a hearty meal of creamy spiced coconut fish and grits.

Mastic “tears,” as they’re called, are translucent fragments of tree resin that give off the scent of high, sweet pine. The fragrance is the flavor, suffusing this version of mouhalabieh, a delicate Arab milk pudding, from the French Palestinian chef Fadi Kattan's cookbook, "Bethlehem." Requirements are few: a pot of milk over flame; a whisking-in of sugar; mastic pounded down to a shimmery powder; cornstarch, for firming; and vigilance. As an early recipe in the 10th-century Baghdadi cookbook “Annals of the Caliphs’ Kitchens” warns: “You should never stop stirring.” Mr. Kattan suggests repeatedly tracing the number “8” with a spoon over the bottom of the pot, so the milk won’t scorch. When the mixture is near custard, pour it, still hot, into individual bowls. “It goes from liquid to quite solid in a few seconds,” he says. Let rest an hour at room temperature, then another two or more in the refrigerator, until it wobbles.

Wild rice, known as manoomin in the Anishinaabemowin language, has been central to the identity and history of Indigenous people in the Upper Midwest and Central Canada for thousands of years. Directly translated as the “good berry,” the sacred manoomin is found in tall green grasses of low-lying lakes and streams, where ricers of all ages use sticks to knock kernels from the grass stalks into the bed of a canoe. This recipe is adapted from Dwayne Jarman, a traditional ricer in Michigan and enrolled member of the Grand Traverse Band of Ottawa and Chippewa Indians. For his son’s birthday every year, he makes a delightful breakfast porridge of hand-harvested manoomin simmered in cream and topped with dried fruit and nuts. A touch of maple syrup and plumped berries balance the nutty flavor of the rice with explosions of warm sweetness. You’re urged to seek out manoomin for this recipe (see Tip), but you could substitute store-bought, commercially cultivated wild rice if preferred.

Ever since I can remember, my mother made a meringue topped with strawberries for Passover dessert, though it always seemed too sweet to me. When visiting my son’s in-laws in Copenhagen, I was so pleased to be served nearly the same meringue as my childhood, but this time studded with roasted hazelnuts and chunks of bittersweet chocolate, cutting its sweetness. Now my family's Passover tradition continues in this updated recipe adapted from my new cookbook, “My Life in Recipes” (Alfred A. Knopf, 2024). It works well throughout the year, especially for gluten-free guests (see Tip if you will be cooking it in a humid environment). You can even make this dish dairy-free by using coconut cream in place of the heavy cream. Excellent for any celebration, this dessert feels quite fancy but involves little effort.
