Thai Tea Tres Leches Cake

The marquee dessert at Golden Diner, in Manhattan’s Chinatown, is a take on tres leches, a Latin American cake soaked in three kinds of milk, as the Spanish name attests: whole milk, condensed milk and evaporated milk, its unsweetened cousin. Sam Yoo, the chef and owner, infuses the milk with Thai tea powder, a blend of black tea and vanilla that yields a signature tiger-orange hue. The longer the cake soaks, the better it is. (Mr. Yoo lets it rest for as long as two nights, with a flip in between so the liquid that’s pooled at the bottom has another chance to run through.) The cake is finished with whipped cream, coconut flakes toasted near gold and lime zest lending a bright sting. Keep the cake in the refrigerator until the last moment, so it’s as cold as possible and melts in the mouth, almost like ice cream. The faint bitterness of the tea checks the sweetness of the cake, so it’s just enough.

The joy of preparing halo-halo, the sweet, icy, creamy and colorful Filipino dessert, might only be surpassed by the pleasure of eating it. The name means mix-mix in Tagalog, which refers to the best way to eat it: Combine everything by digging from the bottom up with a tall spoon. Shaved ice and a mix of evaporated milk and sweetened condensed or coconut milk are the foundation of this dessert; everything else is up to personal preference. In general, halo-halo includes a mix of syrup-soaked beans, corn, coconut gel, tapioca pearls, jackfruit, mango and banana. Jarred halo-halo mixes are available as a starting point (see Tip). Just make sure to have all the ingredients ready so the ice doesn't melt once it’s placed in the glass. If preparing for a crowd, set up a toppings bar and let people build their own.

Marva Adams-Miller has been perfecting her Caribbean black cake recipe for three decades and sells the cakes from her home in Brooklyn, N.Y. She adapts them based on customer preferences. Some years she has used Baileys Irish Cream or other liqueurs, but this version with rum is most common throughout the Caribbean islands. The cake is an evolution of the Christmas fruitcakes that English colonizers and Irish indentured servants brought to the Caribbean in the 17th century. The recipe was adapted to local ingredients, using grated tonka beans, a flavoring that tastes like a mix of pear, vanilla and almond instead of vanilla extract. Later the tonka was replaced with commercially made mixed essence, a flavoring that has a similar aroma and flavor. Rum was substituted for whisky or brandy. Burnt sugar syrup (also called browning) is integral to enhancing the deep, plummy flavor and appearance of this cake. The candied and dried fruits are traditionally soaked months in advance of baking — the longer the better, even up to one year — but, in a pinch, they can be heated with the alcohol and left to steep overnight before using.

Also known as plum pudding or Christmas pudding, figgy pudding is a traditional British dessert served on Christmas. (“Pudding” in the United Kingdom is what “dessert” is called elsewhere.) Many families boast their own recipes, but in general, this rich cake-like dessert is made with a mix of dried fruits soaked in liquor, warm spices, fresh breadcrumbs, nuts and sometimes candied citrus. Beef suet, which is available online, is the traditional fat used, but it can be substituted with butter. Figgy pudding preparations often begin the Sunday before Advent, on Stir-up Sunday, when family members take turns stirring the pudding. Figgy pudding requires planning, so start shopping for ingredients at least one month before Christmas. After the initial steam, the pudding rests at least 3 weeks for the flavors to meld. The pudding can also be made months in advance, stored in the freezer and reheated before serving. The final presentation of drizzling it with liquor and setting it on fire is worthy of a grand holiday celebration.

Orange and cranberry are a wintery match made in heaven. This loaf has a good amount of orange zest, which releases its essential oils when ground together with the sugar to give the cake a lot of flavor and a beautiful orange hue. A little orange juice, swirled together with yogurt, ensures a super moist crumb. The plump cranberries burst in the oven and dot the loaf with welcome pockets of tartness. When they are in season, fresh cranberries are perfect here, but frozen will work just as well. Do not thaw them before swirling them into the batter but do note that frozen cranberries will increase the overall bake time a bit. Freeze the baked loaf, well-wrapped, for up to 1 month. Thaw at room temperature to serve.

Cast Iron Orange Cake

This is an elegant version of an easy Sunday cake – one that can be made early in the morning for eating a warm slice right out of the oven with coffee, and then letting it sit on the counter to enjoy it as a snack cake as the week rolls along. It magically gets better and better each day. It is adapted from Paul Bertolli’s Bitter Orange Cake recipe in his masterpiece, “Cooking by Hand,” which uses blood oranges. Here, a humble navel orange is used for its friendly sweetness. Rubbing some zest into the sugar, adding fennel and vanilla and flexing the charms of its main character ingredient (the orange), this beautifully simple cake becomes a bit deeper in its character. Playing around a bit with the flour, replacing some of the all-purpose with a toasted chestnut flour or by adding a little semolina, as this recipe calls for, makes for a delightful play on flavor, texture and crumb.
