Raw Vegan Cauliflower Tabbouleh
This is my go-to dish for last-minute party dishes. Don't need to turn on the oven or stove. Made with simple ingredients and so refreshing. A definite crowd pleaser! Make the dish ahead of time to allow the salad to marinate in the dressing. Tastes better as it sits in the fridge. Added boost of protein: hemp seeds.
5-Ingredient Broccoli Stem and Kale Salad with Toasted Hazelnuts:
Don't know what to do with those broccoli stems? Make this refreshing, crunchy, spring or summer salad to share at your next family picnic or gathering. Just 5 main ingredients and can be whipped up in 30 minutes or less!! Freshly roasted hazelnuts add an extra crunch element to the salad.

A Piece-a Pizza Corn!
This is sort of a silly recipe, but a fun way to use the corn which we will no doubt be up to our ears in within the next couple of months (pun 100% intended). The proportions can easily be adjusted to your liking. The finished product is ultimately an interplay of sweet corn, tangy tomato, and salty cheese - and tastes almost like a piece of pizza!

"Moroccan Guacamole" Toasts with Fried Egg
What's not to like about a fried egg and "Moroccan guacamole" avocado toast? Together, they make a pretty rich combo. Whip up this easy breakfast recipe!

Nicaraguan Guacamole
When I was 17, I spent a summer living and working in semi-rural Nicaragua. In my down time, I spent a lot of time in people's kitchens, eating and learning. Of all the delicious homey foods I learned to make, this one was the most surprising: a chunky guacamole made with avocado, onion, lime juice, and hard-boiled egg. The flavor is clean and sharp, and the squishy avocado, chewy egg, and crunchy onion give it a wonderful texture. Fresh cilantro is nice, but optional--the guacamole will still taste great without it.

CREAM CHEESE WITH CHIVES
I decided to jazz up our classic bagel breakfast recipe by adding chives to the cream cheese. Chives have a perfect oniony flavor with a tiny hint of garlic.

Shanghai Noodles Served with Sauce
This is a quick and easy traditional breakfast dish, often seen on Shanghai people's breakfast table usually served together with stir fried eggs, Chinese tea or/and soy bean milk to make a full breakfast. When I was little, my dad cooked this as easy and quick morning dish, and sometimes as dinner as well. Now I cook for my family by myself, so this easy one would be a good choice for a rush morning.

Garlicky Chard
Want to take a break from kale? Give chard a chance. It’s a nutritious green and makes a great warm salad. I made this super easy warm chard-red quinoa salad in less than 15 minutes for a quick lunch. Its loaded with garlic and I topped it with tomatoes to add some freshness. You can add other veggies for more color and taste, add an egg, grilled tofu…this has endless possibilities!!

Edamame with Matcha Salt
Instead of using plain sea salt for the edamame pods, I added matcha to it. This instantly made my mid-afternoon snack extra special.

Maialino's Olive Oil Cake
This olive oil cake recipe with citrus and Grand Marnier has a crackling crust and aromatic oil-rich middle. It's an irresistibly moist and flavorful dessert.

White Chocolate Whipped Cream
This recipe for white chocolate whipped cream is perfect for when a dessert needs a topping that is richer than plain whipped cream, but lighter than ganache.

Champagne Jello Shots
These adorable jello shots are perfect for any occasion, especially New Year’s Eve! I saw this recipe on Erica’s Sweet Tooth and could hardly wait to make them for NYE. They’re easy to make and look so fancy with the festive toothpicks. The guests were “oohing” and “aching” when I walked in with these cuties. Make them with any sweet bubbly wine or champagne.
For the Love of Roots and Leaves
This fun recipe was the very first recipe that I created when I wanted to "try" kale. I had read so much about how it was a Superfood and it was so healthy for me, but I didn't know how to "give it a go". I started with my favorite spices and added in some carrots and when I introduced my palate to Kale for the first time, I was super happy with this super food!

Tortilla de Acelga
I spent some time last year in Argentina with family in a sleepy beach-side town. On day 1 in Miramar the family took us to Rotimar, a favorite lunch spot. We chose from dozens of pastries, baked goods, salads, and so much more. My favorite thing: Tortilla de Acelga (Swiss Chard Spanish Tortilla). I couldn't get enough of it. Upon my return to Texas, I immediately recreated the dish. This is the final and most delicious result. Even for the non Swiss Chard lovers out there, this one may win you over.
