Tortellini Bake
Easy peasy recipe when you don't feel like fussing but want to impress your loved ones.

Black Garlic Roasted Asparagus
Black garlic has soft cloves of dark brown, almost black in color. The flavors are deep, almost caramelized with a wonderful sweet-sour balance. It gives sulphurous asparagus a strong umami kick with a hint of aged balsamic and a smoked taste. Roasted asparagus can be served as a side dish with chicken, or on a bed of pasta for a light supper; topped with grated parmesan. if you blanch the asparagus before roasting, this will enhance their color and taste.

One-Pot Pasta With Ricotta and Lemon
This elegant, bright pasta dish comes together in about the same amount of time it takes to boil noodles and heat up a jar of store-bought marinara. The no-cook sauce is a 50-50 mix of ricotta and Parmesan, with the zest and juice of one lemon thrown in. That’s it. To make it more filling, add peas, asparagus or spinach in the last few minutes of the pasta boiling, or stir in fresh arugula or watercress with the sauce in Step 3. It’s a weeknight and for-company keeper any way you stir it.

Spaghetti alla Chitarra with Smoked Juniper Ricotta, Polpa, and Arugula
Spaghetti alla chitarra is one of my favorite pasta shapes as it can hug the sauce and keep it all tight together. My newest discovery is this beautiful juniper smoked ricotta from Italy, a small production with big flavor. I use Mutti Finely Chopped Tomatoes, or Polpa, because it retains all the freshness of freshly picked fruit when it's canned in Italy and is easy to get at the store. Then I top with some fresh arugula from the rooftop farm close to my restaurant! This recipe calls for Colatura di Alici, which is an Italian fermented anchovy sauce (much like Southeast Asian fish sauce) that is available online and in specialty stores.

Tagliatelle With Prosciutto and Butter
Like cacio e pepe, this prosciutto-studded pasta — coated in emulsified butter, starchy pasta cooking water and Parmesan — requires repetition to master, but it's not at all difficult. Adapted from Evan Funke’s pasta cookbook, “American Sfoglino,” this dish comes together with just a few ingredients, but you’ll need to work fast: Add the pasta, pasta water and cheese to the butter and prosciutto quickly, then stir vigorously while gently jostling the pan back and forth with the other hand. Serve immediately, as the pasta can lose its luster within minutes as it soaks up the sauce.

Lemony Pasta With Asparagus and White Beans
Marinating canned white beans in lemon juice and zest, along with red-pepper flakes and shallots, imbues them with brightness and a touch of heat, adding so much flavor to this warm-weather pasta. It’s dead simple to make: While the pasta cooks and the beans marinate, sauté the asparagus in olive oil, then use that pan to finish the dish. There’s enough asparagus in the mix to make this a one-pan meal, but serving it with a crisp green salad on the side will add a little crunch and freshness.

A Truly Italian Recipe: Spaghetti with Peperoni Cruschi and Breadcrumbs
Peperoni Cruschi, or Peperoni di Senise, come from the Basilicata (Italy), the Region they represent. The Peperoni di Senise are sun dried in the late summer and then fried to become Cruschi (which means crunchy). When they are fried, they are very good as a ready-to-eat snack, but also good to add a strong flavour to many dishes, as in the following recipe: Spaghetti with Peperoni Cruschi and Breadcrumbs.

Tomato sauce with onion + butter + and then some
Marcella Hazan's tomato sauce is nearly flawless. However, I wanted to see if I could make it *even* easier (no time to import tomatoes from Italy? Weird) and a little more green (who wants to remove that delicious, caramelized onion?). So, we added a couple more ingredients (all pantry staples) but preserved the beauty, simplicity, and magic of Marcella's recipe.

Tomato, shallot, and olive oil sauce
This recipe is a vegan friendly riff on the famous “Marcella Hazan tomato, onion, and butter sauce” recipe. I was wondering if the olive oil would be a good alternative for butter. Also I exchanged onion for shallot, added basil, and cooked a few garlic cloves in the oil, hey if you are messing with perfection you may as well go hard in the paint! The result was a rich, silky, pasta sauce that I would serve to guests. The olive oil is very apparent in the flavor, which I love, the better the oil the better the sauce.

Noodles dressed with sesame are popular in many parts of China, but this particular style, made with peanut butter and served cold, became a Chinese-American staple in the United States in the 1970s. The family of Shorty Tang — an ambitious restaurateur who emigrated from Sichuan to Taipei to New York — firmly believes that he invented the dish and still serve it at Hwa Yuan, the restaurant he opened in 1967 in Manhattan’s Chinatown. They have never divulged the exact recipe; this is our own lush but refreshing version.

Somen Noodle Soup With Mushrooms
The perfect salve for cold winter days, this vegetarian noodle soup can be cobbled together in an instant from the contents of a well-stocked kitchen. It takes its flavor from a quick bouillon using just four ingredients: soy sauce, sesame oil, scallions and shiitakes, which deliver a hefty, flavorful dose of glutamate. Poached eggs add richness to the clean and comforting broth. Fresh eggs have stronger, firmer albumen (egg whites) and will thus hold their shape better than older eggs, which have a tendency to unfurl. The main key to achieving that teardrop shape during poaching is allowing the eggs to simmer without disturbance until cooked.

Sun dried tomato and chickpea pasta
This is what I make when I have nothing in the refrigerator and/or don't have time to chop and dice. It is my failsafe and it's so satisfying and is also very inexpensive. If I happen to have asparagus on hand I always throw that is as well but in an effort to keep it as basic and pantry-friendly as possible, I have stuck with chickpeas and sun dried tomatoes and dried herbs and spices.
