Garlic Scape & Basil Pesto
I am part of a CSA (Community Supported Agriculture) and this week, I recieved one of my favorite ingredients, Garlic Scapes! They are actually the plant greens of garlic and only come around a few weeks out of the year! They are insanely delicious with their light garlic and earthy flavor and make for an amazing pesto. I served mine on spaghetti with pan roasted tomatoes. My recent batch included a mix of pine nuts, walnuts and marcona almonds which were all in my pantry and was devine! I also froze some for a great quick crostini when guests come over topped with Burrata cheese.

Simplest Gnocchi
It's taken me years, but I've perfected my Gnocchi, so why not share it with all of you as I didn't find many recipes for just plain old Gnocchi on the site, though there were many with variations, but I'm an old-fashioned Italian and I like them the way Nonne in Italy have made them for years (though in some parts of Italy Gnocchi is made with either ricotta or semolina - but more on that another time!)

Simple Pad Thai
Pad Thai is essentially a stir-fry and requires little more than chopping and stirring. It comes together in less than a half-hour. First you'll need rice stick noodles, which are pale, translucent, flat and range from very thin to more than a quarter-inch wide; you soak them in hot water until they’re tender. Meanwhile, make a sauce from tamarind paste, now easily found in larger supermarkets or online. The paste, made from the pulp of the tamarind pod, is very sour, but more complex than citrus. (It can vary widely in its potency, so be sure to taste as you go.) Made from fermented anchovies (and much like the garum of ancient Rome), fish sauce (nam pla) is another important ingredient. Honey and rice vinegar round things out.

Winter squash is a nutrient-dense vegetable, with lots of vitamin A in the form of beta carotene (the more orange the flesh, generally the more vitamin A in the squash), vitamin C, potassium and dietary fiber. Winter squash goes well with ginger, and this stir-fry makes a delicious vegetarian main course. Use a sweet, dense squash like butternut for this dish.

Malaysian Stir-Fried Noodles With Shrimp
These spicy noodles are based on a classic Malaysian noodle dish, Mee Goreng, but I’ve reduced the number of ingredients. With origins in North India, the dish lends itself well to the Indian Papadini bean flour noodles, which have more protein, ounce for ounce, than steak. If you can’t find this type of noodle, use wide dried rice noodles: soak them for 20 minutes in warm water, then cook 1 minute in boiling water, drain and toss with 1 tablespoon oil as directed.

Noodle Pudding
Noodles, which routinely find themselves saved as leftovers in the back of the refrigerator, can easily be converted into dessert. Milk, butter, cinnamon and eggs combine for the custard that surrounds the cooked pasta, and the whole dish is topped with raisins. If you don’t like raisins, almost any dried fruit — cranberries or cherries, for example — would be a nice substitution.

Pasta With Roasted Garlic, Pancetta and Arugula
For this pasta, garlic is roasted in the oven to bring out its sweetness, then sautéed with bold flavors: salty pancetta, fiery chile flakes and a squeeze of lemon. Chopped peppery arugula and a pound of penne round out the dish. It takes 40 minutes to an hour to roast the garlic, but you can do it a day in advance, and it is worth it for the final, honeyed results.
