Lattice-Top Strawberry Pie

Here is a classic American strawberry pie. The filling is super simple – just strawberries, sugar, a bit of flour and butter – and the crosshatched crust is spectacular. If the thought of weaving together a lattice-top makes you quiver, check out our pie guide for a how-to video, or use a round biscuit cutter to cut out circles and lay them on top, like Melissa Clark did on this sour cherry pie.

Watermelon-Strawberry Slush

Perhaps watermelon fans already know that a chilled wedge is not the only way to enjoy it. What about drinking it instead? Here, watermelon and strawberries are blended with a little sugar, lemon juice and a healthy glug of rum or vodka. Leave the spirits out if you're serving teetotalers or children. Paper umbrella optional.

Toasted-Almond Poundcake With Strawberry-Rhubarb Compote

Poundcake is like brownies: a baker's challenge that sounds like child's play. The name itself is traditionally half the recipe – a pound each of butter, eggs, sugar and flour – but the technique is critical to producing a cake that is so tender it can stand alone but is still sturdy enough to hold up under a fruit compote, ice cream or sauce. This recipe, adapted from Joseph Murphy, a pastry chef at Gotham Bar and Grill, calls for melting the butter first, beating the eggs and sugar together until they are very thick, then whisking in the flours and the butter. Although the proportions are the same as for any other poundcake, the result is almost spongy, with a fine crumb.

Champagne Cobbler

How to toast the new year? Perhaps some Champagne. Or maybe a cocktail. Then again, why choose when you can have them both in one glass? The Champagne Cobbler, a luxe refreshment featuring the classic combination of champagne and strawberries, is a best seller at the Raines Law Room in the Flatiron district.

Sour Cream Ice Cream With Brown Sugar Strawberry Swirl

Wait to make this until good strawberries are available, because this fool-proof method lets their flavor and texture really shine through. Tangy from the sour cream, this is imbued with a caramel-tinged brown sugar sauce, and the ice cream itself has a soft but not runny texture. Think Mister Softee meets artisanal.

Winter Strawberry Gelato

I’m calling this “winter” strawberry gelato only because I’m making it with frozen organic strawberries. You can use sweet, fresh strawberries when they’re in season. The recipe is inspired by Sherry Yard, a pastry chef who taught me that you can make perfectly wonderful ice cream with no cream and no eggs. I make this one with 2 percent milk, but you could use whole milk. If you’re thinking of using skim milk, substitute water and make sorbet.
