White Rice, Sort of Jiro-Style

I use a rice, either short grain or medium grain, that is processed using the kapika method which is a dry polishing method. It basically uses the grains to polish themselves. It reduces the amount of bran left on the rice, which helps to keep the grain fresh, and calls for no rinsing. This kind of rice is the kind of rice chopsticks are made for. It isn't as sticky as Thai sticky rice but the grains still bind together more than enough so you aren't picking up individual grains with your chopsticks. It has a beautiful taste and texture. I think the enameled cast iron pot works great here. The rice doesn't stick to the bottom and it is good even heat.

Scottish Oatmeal Breakfast with Teff Grain and Flax Seeds

This is a breakfast I created to use Scottish oats, which are whole oat groats that have been flattened in a slow grinding process, producing something like rolled oats, but retaining all the nutritional value of the whole grain. They take longer to cook than rolled oats but would get too mushy if cooked overnight in a slow cooker like steel cut oats. To make these work for a quick weekday breakfast, I was inspired by a recipe from Heidi Swanson of toasting rolled cereal the evening before. I found that toasting these in some butter and then soaking them in boiling water made them easy to finish off the next morning. Then I experimented with other grains and liked including some nutty teff grain for body and flax seeds for texture. I've also made this with a mixture of rolled and steel cut oats, and I've swapped in chia seeds for the teff grain, all with good results. This hot cereal is delicious with lots of different toppings. I suggest dried apricots, hazelnuts and a drizzle of maple syrup. Will including the nutritional powerhouse of teff grain and superfood of flax seeds in your daily breakfast bring you health and superhuman powers? Maybe not. But taking the extra few minutes in the evening to start a warm bowl of oatmeal for the following morning, and infusing your house with the fragrance of buttery, toasted grains in the process, will make you feel cared for, which apparently accounts for a great deal of the healing power of placebos. A good breakfast when you'd like a little extra insurance for getting through a demanding day.

Nutty Crispy Tofu

This is slightly crispy on the outside and soft and tasty on the inside. The nutritional yeast gives it a slightly nutty flavor, but feel free to substitute with corn starch. I usually serve this tofu over a bed of jasmine rice, sometimes over stir-fried vegetables too, and sometimes just with the dipping sauce. Oh and my five year old daughter loves it!

There's panettone everywhere. Even after the holidays, I still can't manage to keep bread at bay (ominous music plays) Moving on! So, we make do with what we've got, right? Kind of. But yes, stores are still stocked with 'price reduced' panettone loaves. During one of my endless yet glorious grocery escapades I happened upon a pristinely wrapped Pandoro Milano - seemingly, unshaken by the frantic rush of the holidays. It was G. Cova...I look for the price, thirteen dollars. Thirteen Dollars! Are you kidding me? Where was that price tag when I needed it most? Apparently, this panettone is one of Martha Stewart's favorites for making french toast. Enough mind babbling, I'm sure Martha Stewart has fine taste. I say, "You're coming with me." and throw her in my basket. I can't even pick at her on my way home - she's wrapped in beautiful Italian-esque wrapping paper and twine. I speed. Home! I carefully unwrap my loaf as so not to disturb the paper too much and reveal a humble, sophisticated mountain-shaped confection. I slice the top and marvel over the cute star shape in front of me and slowly raise it up to my mouth...divine melt. I see why this panettone is so illustrious. That kind of comfort in your belly is matched by no other (I'll eat those words later) Mom greets me in the kitchen, mouth full, crumbs and all on my face I say, with wide eyes, "You know what would be good with this? Strawberries. Holy Cow, eff that!" I reach for my VitaMix, "I'll show you."
