Slow-Cooker Cassoulet

Many look down their noses at the slow cooker, but it's perfect for some dishes. Stews, for one. This sausage, duck and white bean stew is rich and hearty, and you can leave the dish wholly unattended for five to seven hours as it cooks. Brown the meat before you put it in the pot or not.

Lentil Salad With Roasted Vegetables

This lentil salad looks and tastes bright, thanks to a combination of tangerine juice, sherry vinegar and colorful caramelized roasted root vegetables. It works either as a main course, served with good bread and butter, or as side dish with roasted meat or fish. For the maximum visual impact, use both golden and red beets. Vegetarians can feel free to leave out the bacon. Leftovers will keep for at least five days, though try to pack it up without the radicchio, which gets soggy in the fridge.

Orange-Scented Winter Squash and Carrot Soup

I was looking around for new approaches to winter squash and found a wonderful looking recipe in “Plenty More,” the latest collection from Yotam Ottolenghi, for roasted butternut squash with buckwheat polenta. The squash was seasoned with allspice, cardamom, and orange peel, among other things, and I was inspired to try these seasonings in a soup. I tied the spices, herbs and orange peel into a cheesecloth bag and simmered them in the soup to great effect. The essence of orange is especially appealing.

Roasted Carrots with Goat Cheese, Peanuts, and a Balsamic Drizzle

This is on the appetizer menu at a local Italian-ish restaurant, I love it so much that I order it as my main course every time I go. Needless to say, I had to recreate it at home. They use a wood-fired oven for their carrots, so if you have one laying around, you should too. If not, muddle through like the rest of us with your plain old, regular oven.

Sweet and Spicy Roast Chicken

A chile-flecked, honey-imbued marinade spiked with fresh citrus juice gives this chicken its fiery, syrupy character. Dates and carrots give the sauce texture and additional sweetness while a garnish of fresh herbs and pistachio nuts lends freshness and crunch. It’s dinner party food at its most flavorful and convenient; its honey marinade makes it a particularly wonderful main course for Rosh Hashana, the Jewish New Year. The ingredients can be assembled up to 24 hours in advance, then all you need to do is pop it in the oven just before your guests arrive, and garnish it at the last minute. Serve it with couscous, polenta, rice or another soft grain to soak up the sauce.

Quinoa Salad With Roasted Carrots and Frizzled Leeks

This quinoa salad, filled with soft roasted carrots, currants and a pomegranate molasses-spiked dressing, makes enough to feed a crowd, though you can easily halve the recipe for a smaller group. You can make it with any color quinoa you come across – it comes in shades of tan (called white), rusty red and brownish black. Just don’t mix them together in one pot because they all have slightly different cooking times. As for the pomegranate molasses, it's available in specialty shops and online, but if you don’t have it, substitute a good quality balsamic vinegar spiked with a little honey if you like. You can toss together the quinoa, dressing and carrots the day before serving, but don’t add the arugula until the last minute to keep it as fresh and crisp as possible.

Ten Minute Spring Rolls

The actual prep time for these delicious spring rolls depends upon your choice of veggies, but when time is of the essence, ten minutes is enough. Cabbage, lettuce, avocado, tofu and sprouts are your speediest options. Carrots, peppers, cukes and herbs take a bit longer, but not much. The rest is a snap; just dip the spring roll wrapper in water for a few seconds as it softens like magic and you’re ready to fill and roll.

For the Love of Roots and Leaves

This fun recipe was the very first recipe that I created when I wanted to "try" kale. I had read so much about how it was a Superfood and it was so healthy for me, but I didn't know how to "give it a go". I started with my favorite spices and added in some carrots and when I introduced my palate to Kale for the first time, I was super happy with this super food!

Charred Carrots with Orange Peel and Mint

A lot of people hate cooked carrots, I imagine because of the bland school lunch variety that has been boiled within an inch of it's life. Fair enough. But I believe this crispy and sweet version would be enough to convert even the most devout hater. Roasted at high heat until they are blistered and tender crisp, the orange peel highlights their sweetness, and the mint brings and element of irresistible freshness.

Rejuvenating Pure Carrot Soup

A perfect example of "less is more". Carrots abound at the greenmarket these days, and I wanted to create a carrot soup. A dear friend, and former chef, gave me a few tips on how to turn humble carrots - still dark with dirt - into a dynamite soup. It's all in minimal ingredients, careful cooking, and a few accessories at the end. Hope you enjoy.
