Coconut Black Bean Soup
Earthy black bean soup gets a plush makeover with the addition of canned coconut milk, which lends richness and a sweet, mellow flavor. Whole cumin seeds and tomato paste add depth, while jalapeño contributes both brightness and heat to the pot. You can purée the soup until it’s velvety smooth, or leave it a little chunky. Either way, it makes for a satisfying and hearty weeknight meal.

Winter Minestrone With Cabbage Pesto
The warmth of a winter minestrone brings comfort as the seasons transition. Minestrone — vegetables, beans and pasta — shouldn’t be too strict and this recipe can be used as a guide. Cabbages become plentiful in cold weather and are celebrated in this dish, used first to flavor the soup, then whizzed into a pesto to spoon on top. Spinach can be swapped for chard, pasta for rice, black beans for chickpeas or other beans; just take account of any necessary adjustments to their cook times. This version uses black beans (as opposed to more traditional cannellini or borlotti beans) for their small size and rich flavor. They nestle nicely among the other vegetables without dominating the soup, adding wonderful nuttiness and depth alongside the cabbage.

Shoyu Ramen
Soy sauce, or shoyu, dashi and chicken broth are the foundation of this comforting Japanese noodle soup, which is garnished with hearty toppings like soy-marinated eggs, pork belly, pickled bamboo shoots and fish cakes. Traditionally made with homemade dashi and chashu, or Japanese pork belly, you can speed things up by using instant dashi powder and store-bought chashu. (If you make chashu from scratch, use the cooking liquid to flavor the soup.) The soy-marinated eggs must be prepared at least 6 hours in advance, but that leaves time for other ingredient prep, including rounding up a range of textural toppings, which can all be found at a Japanese market. As for the ramen noodles, frozen, fresh or dried all do the trick.

Okinawan Soba
Though soba usually refers to buckwheat noodles, Okinawan soba uses wheat noodles that more closely resemble ramen. The chef Steven Pursley, whose family comes from the island prefecture off the Southern coast of mainland Japan, makes his own noodles from scratch. You can use store-bought fresh ramen noodles or another thicker Asian egg noodle for this soup, which gets its flavor from a delicate pork and bonito broth. You can find the noodles, kombu, sake, mirin, bonito, fish cake and red pickled ginger at Japanese markets or well-stocked Asian grocery stores.

Ozoni (New Year Mochi Soup)
Typically consumed just once a year on New Year's Day, this brothy soup is comforting and nourishing. It’s also said to bring good luck and good fortune to those who eat it. Ozoni is highly customizable, but it must always contain pieces of chewy mochi. The rice cakes are traditionally pounded by hand, but are now sold already prepared and are easy to find in Japanese markets around the New Year. This Japanese American version from the chef Chris Ono includes pork belly that simmers in a mix of dashi, soy sauce, sake and ginger until tender. To balance that richness, he serves this soup with lots of mizuna leaves, which can easily be substituted with spinach. For those who believe pork is unlucky at New Year's, it can easily be left out or substituted with chicken.

Turkey, Farro and Chickpea Soup
Filled with spices and nubby with grains and beans, this easy soup is a satisfying way to use up as much of your leftover Thanksgiving turkey as you’re willing to spare from future sandwiches. Pearled or semi-pearled farro will soften in about half an hour, but you can use other grains here as long as you adjust the cooking time. White rice will be ready in 15 to 20 minutes, while brown rice and barley need about 45 minutes to an hour. (You might need to add a little water if the liquid level in the pot reduces too much.) And if you want to make this aromatic soup when you don’t have leftover turkey on hand, cooked chicken is a perfect substitute.

Gumbo
While there are no hard and set rules, it’s generally agreed that roux and the “holy trinity” of celery, onion and green bell pepper are the foundation of gumbo, a pleasantly spicy, thick soup that was declared Louisiana’s official state dish in 2004. From there, gumbo can include a wide range of meat, seafood and vegetables. (Chicken, andouille sausage and shrimp are highlighted in this version.) The roux — a combination of vegetable oil and flour, in this case — takes time and patience, as it needs to be continuously stirred to achieve a deep shade of brown. To break up the work, the roux can be prepared up to a week in advance, and the gumbo can be made the day before eating. (Second-day gumbo has an even deeper flavor.) Filè powder, which is ground sassafras leaves found in the spice aisle or online, is optional, but if using, sprinkle some over each bowl, or stir it into the pot off the heat to thicken and flavor the soup.

Turkey Soup
This simple, comforting soup is an easy way to use up leftover Thanksgiving turkey. If you’re feeling up to it, make your own homemade turkey stock, or use store-bought for a quick dinner and a respite after a marathon of holiday cooking. If you happen to have leftover gravy, add a bit at the very end of cooking for a silky richness and deeper flavor. Like many soups, this one freezes well, though you might need to add a splash of broth or water when reheating, as the pasta will continue to absorb the broth as it sits (see Tip).

Saimin
This beloved noodle soup — unique to Hawaii and its local food tradition and thought to be a mashup of ramen, pancit and chow mein — is all about simplicity, according to Mark Noguchi, a chef and educator at Punahou School in Honolulu. “That is how we are preserving a part of our culture,” Mr. Noguchi said. His saimin recipe is made of a dashi-based broth enhanced with dried shrimp and black peppercorns, saimin noodles, wontons stuffed with pork and scallions and all the fixings: barely set eggs, char siu, kamaboko (Japanese fish cake) and scallions. Cook the hot components of the dish — broth, noodles, eggs, wontons — so they finish at the same time and can be assembled together quickly for hot, happy slurping.

Egusi Soup
A delicious blend of stewed leafy greens bathed in a nutty, creamy sauce of ground egusi seeds, this soup is incredibly popular across West Africa. The off-white, sliced almond-shaped seeds are harvested from the melon fruit of a climbing vine native to West Africa. Also known as egunsi, agushi or egwusi, they act as a thickener in soup, especially when combined with a broth and added to a base of onions, palm oil and irú. This recipe includes chunks of meaty roasted mushrooms and fresh tender spinach leaves, but use what’s available to you, whether that’s meat or more traditional hearty greens, like ẹ̀fó̩ tẹ́tẹ (amaranth greens), ugwu (fluted pumpkin leaves) or tender ẹ̀fó̩ gbure (waterleaf). Each version you make that’s a little different is also a little more personal. But it’s the seeds that make it always recognizable.
