Tomatoes are a summer staple, and, for the most part, the large heirlooms are different than but equally enjoyable to their runty cousins. However, I find that cherry tomatoes shine best either raw (like savory candy, pints of which can be wiped out in minutes) or very lightly cooked so they pop or explode in the mouth with a saucy goodness that a bigger sliced version simply lacks. Here is my favorite quick and easy version of the latter. This dish is a wonderful accompaniment to chicken, fish, or shrimp.

Cherry Tomato Confit

As the term confit implies, this gob of tomatoes is luxuriously rich. The key to the recipe is its simplicity (3-4 ingredients) and time to cook (1 hour) which allows the tomatoes to break down and ooze together with a generous amount of olive oil. The resulting jam is ridiculously intense, and may be divvied up in batches (and frozen) for all kinds of use. Smear some of the confit on crostini, spoon a dollop into a bowl of pasta, use as a pizza sauce, or dilute it with cream for a silky, decadent soup.

Grilled Eggplant Salad

Here is a deeply flavored salad that can be prepared entirely outdoors, keeping the heat out of the kitchen. Grill a whole fat purple globe eggplant until the skin blisters. Then scrape the soft insides into a bowl and season them with red wine vinegar, garlic, good olive oil and fresh herbs. A few capers on top add a pleasing brininess. Serve it with pita bread, a good rosé and a hunk of feta, and want for nothing more.

This is an incredibly simple recipe. Almost child’s play. All you really need is perfectly-ripe, but firm and juicy tomatoes at room temperature — they are the star ingredient here. My mom has been making these ever since we were children. And I have never had this exact combination anywhere else. It's an excellent starter on a warm summer evening. You can also serve it over a piece of toasted bread in the spirit of a bruschetta. The bread soaks the briny solution oozing out of the tomatoes and tastes heavenly!

Tomato Sandwich

It's early here for tomatoes--- we haven't yet gotten them in our CSA box-- but fortunately there's a small farmer near us who has just started selling his tomatoes--and they are wonderful. Tomato season is so short here in the Northeast, and the tomatoes are so amazing, that all I want to do is salt them and eat them. Or have them in a sandwich. Which I do--frequently. A tomato sandwich is really best when the tomatoes are fresh picked and still warm from the garden. Slice them thickly, use the best bread you can find, and enjoy. Summer is short in these parts---this is pure pleasure.

My mom would gussy up plain white rice with uncooked chopped tomatoes in their own juice, a comfort food that screamed "Summer!" to me way back then, and now this simple side dish calls the same message to my kids and grandkids. Choose a full-flavored old-fashioned variety of tomato of any color, not one that's been been bred to ship well, one that is dead-ripe but not soft, and preferably one that hasn't been chilled. Sometimes, if I'm putting on airs, I'll add chopped fresh basil, chives or thyme to the tomatoes, but I (we) much prefer it without the herbs. So simple, but satisfyingly good.
