Zucchini Slivers

I have yet to meet a single person that can resist these fried gems. Slivered zucchini is dredged in flour and then fried. A generous sprinkling of sea salt as soon as the slivers are out of the hot oil is the perfect final touch. You can serve these as an accompaniment to meat or fish, you can serve it as a garnish, and you can even make it as finger food for a party. It's a great way to use all that zucchini from the garden and it works well with green or yellow zucchini.

EASY, BREEZY BUTTERNUT SQUASH

I discovered this dish earlier this year at Los Angeles restaurant, Nick & Stef's. Everyone at our dinner party loved this recipe! I so much so that I called the restaurant the next day to ask the chef if he'd share his recipe with me... lo and behold... he was kind and gracious enough to do so. Feel free to play with different seasonings that you really enjoy. Can even combine with rice or pasta. However, admittedly, I love it just the way it's described below... Bon Appétit!

My Great Aunt taught me how to make this, so I'm guessing it is an authentic southern recipe! I like it most because you can stretch a few squash to go a long ways! It is also good with any of the squashes - but, my family prefers it most with yellow squash. Even my kids eat it.

This salad is probably my favorite, especially this time of year when the tomatoes are ripe an juicy. It is also the easiest. It is light but filling, packing in lots of calcium and vitamin C. Plus, if you grow it yourself you get a little extra satisfaction. I know I did! There is nothing like watching your herbs and veggies grow, picking them at their peak, and then getting to enjoy them just a few feet from where they started as seedlings. Not to mention what you save on the grocery bill!

This sherbet is cool as a cucumber (sorry, couldn't resist), takes very little time to make, and is much more delicious than I expected! I was inspired to make a frozen dessert featuring cucumbers after seeing drbabs recipe for cucumber mint ice cream, and I'm calling this a sherbet because it's got a little dairy in it...you can leave the creme fraiche out and have sorbet instead (but I like how the creme fraiche balances the honey). - WinnieAb

Snackin' Cukes

I tried this recipe when my garden yielded tons of cucumbers and I was dieting. I sliced the cucumbers very thin and sprinkled Splenda sweetener on them and then tarragon vinegar. I refrigerated them for a few hours and when I got the muchies this "sweetish" delight made a great dietetic snack. I now serve this treat as a summer salad. Hope you like it.
