It was one of those recipes that was so immediately appealing that I mentally checked off the ingredients as I read it. I had everything the recipe called for and I set off to the kitchen, anticipating eating the cookies within the hour. That's when I read more carefully and saw that the dough needs to sit for at least 24 hours or up to 3 days. My heart fell. I did make them and they were utterly delicious. But who can routinely wait 24+ hours to satisfy their cookie cravings? And how many cookies should anyone eat anyway? I've since funneled the spirit of the cookie into my morning toast, and I have to say, it is pretty awesome.

Lemony Pasta With Asparagus and White Beans
Marinating canned white beans in lemon juice and zest, along with red-pepper flakes and shallots, imbues them with brightness and a touch of heat, adding so much flavor to this warm-weather pasta. It’s dead simple to make: While the pasta cooks and the beans marinate, sauté the asparagus in olive oil, then use that pan to finish the dish. There’s enough asparagus in the mix to make this a one-pan meal, but serving it with a crisp green salad on the side will add a little crunch and freshness.

Rainbow Cake
This Technicolor cake is a project, but one you can pull off with a little elbow grease and lots of butter (nine sticks, to be exact). Most rainbow cakes call for coloring the individual layers of cake batter, but here, the frosting is tinted, creating an impressive rainbow inside each slice. The batter uses egg whites for a light, fluffy, just-sweet-enough layer cake, while the leftover egg yolks in the frosting make it smooth and creamy. We’ve included instructions for making the ombré and piped versions of the cake below, but you’ll need to make an extra half-batch of frosting for the piped version. A standard mixer cannot accommodate more than one batch of frosting at a time, so you’ll need to make the half-batch separately, then combine them before coloring and frosting.

Caesar dressing ingredient lists love to be long-winded, but this recipe gets straight to the point: anchovies, Parmesan, lemon juice, olive oil, and pepper.

New Shrimp Louie (Poached Shrimp Salad)
In this spirit of classics like shrimp Louie or niçoise salad, this is a fairly basic, highly customizable salad-for-dinner deal, in which the nonnegotiables are fresh seafood (shrimp or salmon), crunchy lettuce (romaine or Little Gems) and tons of lemon (which comes in a tangy vinaigrette made with shallot and tarragon). From there, you can add any number of raw or lightly blanched vegetables, like shaved radish, sliced avocado or blanched green beans. To make things easy and efficient, the shrimp, eggs and green beans can all be cooked in the same pot of boiling water, so it’s not much of a fuss.

Scrambled Eggs With Buttery Bread Crumbs
Also known as the “poor man’s Parmesan,” pan-fried bread crumbs are most often found on top of pasta. But it turns out, they’re great on just about anything. Case in point: tender, fluffy scrambled eggs. Think of it like eggs and toast, just different. I always have English muffins around, but feel free to swap in your favorite bread. Sourdough, whole-wheat, multigrain, rye, anything works. And while this is wonderful with just the eggs and crumbs, if you’re feeling ambitious, you could call in some finely chopped chives, hot sauce, or even—wait for it—grated Parmesan.

Espresso Caramel Sauce
While most caramel sauces are tooth-achingly sweet, this one is anything but. The secret? A big spoonful of instant espresso powder, which takes a cue from Starbucks-famous caramel macchiatos, and turns this sauce into something bittersweet and complex. A couple other tricks: Take the sugar as dark as possible, which brings out all the malty, butterscotchy flavors of a truly good caramel. And salt it to taste. I call for a ½ teaspoon—a good starting point—but once it’s cooled down a bit, try it for yourself and add more until it’s good enough to go back for another spoonful. Adding an acidic ingredient, like vinegar or lemon juice, as soon as the sugar turns clear helps sidestep crystallization (aka, messed-up caramel sauce). This is, of course, great on ice cream. But don’t let that stop you from pouring it all over a slice of pound cake, or a walnut brownie, or a blondie, or even some apple slices. You get the idea.

This Big Little Recipe takes the same ingredient as classic spaghetti carbonara, but reworks the quantities and technique so you end up with—ta da!—a frittata.

Tomato, shallot, and olive oil sauce
This recipe is a vegan friendly riff on the famous “Marcella Hazan tomato, onion, and butter sauce” recipe. I was wondering if the olive oil would be a good alternative for butter. Also I exchanged onion for shallot, added basil, and cooked a few garlic cloves in the oil, hey if you are messing with perfection you may as well go hard in the paint! The result was a rich, silky, pasta sauce that I would serve to guests. The olive oil is very apparent in the flavor, which I love, the better the oil the better the sauce.

Traditionally served on St. Nicholas Day in Belgium and the Netherlands, crisp, gingerbread-like speculoos cookies have risen in popularity after airlines began offering them as mid-flight snacks. Cookie butter, a creamy spread, incorporate that cookie’s flavors. This easy pie uses crumbled speculoos (also known as speculaas) in its crust and the cookie butter in its filling, doubling up on the flavor of warm spices like cinnamon and ginger. The whole thing comes together in about 30 minutes. The pie is perfect all on its own, but if you want to dress it up, add some unsweetened whipped cream and a sprinkle of cookie crumbs. Avoid sweetened whipped cream, which would take this pie from sweet to cloying.
