Morning Bread Pudding

This special occasion breakfast dish is like a cross between a tarte Tatin and a moist, delicate bread pudding. You have to plan ahead – it needs to sit in the refrigerator overnight – and it requires the preparation of a simple caramel sauce, but it's absolutely, 100% worth the effort. Once the sauce is done, swirl it around the bottom of a pie pan, fill it with slices of challah, then saturate it with a slurry of eggs, sugar, mascarpone cheese, milk and a dash of almond extract. Let it rest overnight, bake and invert on a platter. Serve with a dollop of mascarpone or fromage blanc to cut the sweetness.

Apricot Bread Pudding

Apricots and almonds always make a good pairing. Even apricots that are less than sweet will develop an intense flavor when they bake. Separating the eggs and beating the whites to a soft meringue, then folding the meringue into the bread mixture lightens the bread pudding. It will puff when it bakes.

Cherry Bread Pudding

This is inspired by a recipe by the French baker Jacquy Pfeiffer, whose French Pastry School in Chicago is the only school of its kind in the country. Jacquy’s recipe, called a bettelmann, is a traditional Alsatian dish made with day-old brioche. This version, made with regular or whole-wheat bread, is not as rich.

Bread Pudding Frittata

At El Rey Coffee Bar and Luncheonette, you can get this rich, silky egg terrine all day long, but it’s particularly wonderful at breakfast or brunch. Although it does take time to put together, you can do all of it well ahead – up to 24 hours. And the last minute work is minimal (slice an avocado, chop up some fresh herbs). Don’t be tempted to skip the frequent stirring while the dish bakes. It may seem fussy, but in fact is the key to the luscious texture, which is somewhere between custard and bread pudding.

Chocolate Babka Bread Pudding

Chocolate Babka Bread Pudding

Babka is part of the rich, sweet Eastern European baking tradition that Jewish cooks brought to the United States in the early 20th century. It is made with layers of rich yeast dough, covered with chocolate or cinnamon sugar, then twisted and folded into a loaf. And as if babka itself were not irresistible enough, in this recipe it is combined with challah and a milk-egg-cream mixture and baked into a golden, rich dessert. Once the Ashkenazi Jews arrived in the United States, luxuries like strudel, rugelach and babka became more accessible: a chocolate or cinnamon babka was a Sunday-morning treat in many households. But making babka at home became too time-consuming, and now it is easy to order online. Breads Bakery in the Flatiron district of Manhattan makes (and ships) an extraordinary dark-chocolate version.

These dishes, known also as strata, can be rich, but they are just as satisfying when made with low-fat milk. The formula works well for any number of cooked vegetables tossed with stale bread and mixed with milk, eggs and cheese.

Savory Bread Pudding with Tomatoes and Herbs

Stale baguettes and country breads give me a welcome excuse to make savory Italian bread puddings, called stratas. You can add different vegetables in season, such as sautéed mushrooms or greens to the mix.
