Goat Cheese & Fig Pizza
Creativity was at its peak and I came up with this combination. I thought the pizza turned out to be a bit dry so I'd add caramelized onions next time. Just melt 1 tbsp unsalted butter in a non-stick pan and cook 1/4 cup sliced yellow onion until they turn light brown.

Rutabaga "Cacio e Pepe"
I was pleasantly surprised the first time I made thinly sliced rutabaga cooked with nothing but toasty black pepper and butter. The flavors were earthy, sweet and complex and I ate a whole platter. We make noodles out of all sorts of vegetables (zucchini, carrot) and I wanted to try the same with the rutabaga. Thinking of that peppery goodness, I decided to try to make a version of the Italian cacio e pepe dish which is basically fresh pasta tossed with pasta water, cheese and pepper. I knew the rutabaga would not hold up to the vigorous stirring or have the starch required for the creamy sauce, but figured the flavors would be excellent and this dish did not disappoint. I served it with grilled pork chops with a peach gastrique and bitter green salad. Earthy, summery goodness.

My new favorite flavor combination is tomato and mint. With watermelon and a scoop of mozzarella, it's a light summer lunch. Burrata is hard to come by in my neck of the woods, but if you can get it, use it instead of the mozzarella

Garlic Scape & Basil Pesto
I am part of a CSA (Community Supported Agriculture) and this week, I recieved one of my favorite ingredients, Garlic Scapes! They are actually the plant greens of garlic and only come around a few weeks out of the year! They are insanely delicious with their light garlic and earthy flavor and make for an amazing pesto. I served mine on spaghetti with pan roasted tomatoes. My recent batch included a mix of pine nuts, walnuts and marcona almonds which were all in my pantry and was devine! I also froze some for a great quick crostini when guests come over topped with Burrata cheese.

BLT Wrapped Bites with Feta Cheese
I love cherry tomatoes and especially love the varieties available. With a box of cherry heirlooms, this preparation came to mind. The trick was to come up with a bite that would be easy to prepare and not wind up on everyone's laps or my floor. Serving the bites enveloped in romaine lettuce leaves makes it easy for eaters to wrap up the filling, and enjoy the feeling of a BLT. I prefer using feta cheese to blue cheese or chevre - blue cheese will be sharper in flavor; chevre milder.

Growing up my mom called them blintz, and it wasn’t until my freshmen year at the cafeteria in college that I realized these are not your traditional blintz. The saltiness of the halloumi is delicious with the cranberry sweetness and the stuffing adds further flavour. These work best with ciabatta bread but you can use what you have. I homemake the cranberry sauce using Jamie Oliver's recipe and buy the stuffing ready made in the supermarket.
