This is a great way to make caprese that is 'finger food' - it also holds up well at potluck events and is great for vegetarians. Nice thing about this is that you can be as fancy or as basic as you want. Sometimes you may want to cut the grape tomatoes and mozzarella in half when assembling the skewer - putting the cut side towards each other with a piece of basil in between.

I discovered this dish earlier this year at Los Angeles restaurant, Nick & Stef's. Everyone at our dinner party loved this recipe! I so much so that I called the restaurant the next day to ask the chef if he'd share his recipe with me... lo and behold... he was kind and gracious enough to do so. This salad is probably my favorite, especially this time of year when the tomatoes are ripe an juicy. It is also the easiest. It is light but filling, packing in lots of calcium and vitamin C. Plus, if you grow it yourself you get a little extra satisfaction. I know I did! There is nothing like watching your herbs and veggies grow, picking them at their peak, and then getting to enjoy them just a few feet from where they started as seedlings. Not to mention what you save on the grocery bill!

I have always liked the idea of cheese courses and I am one to order a cheese course when offered. This one I use as a dessert but is also good for breakfast or maybe with some arugula as a light lunch. I have been wanting to try burrata for a long time and low and behold I am finally getting the chance. If you don't know burrata it is fresh mozzarella wrapped around fresh mozz curd and cream. My Cheese lady, who I was lucky enough to teach as a student in culinary school, told me it is mozzarella crack and I can do nothing but agree. Everything in this recipe compliments each other and brings forward all the flavors of each ingredient. - thirschfeld
