Mushroom Risotto With Peas
If you are ever at a loss for what to make for an impromptu dinner party, especially if there will be vegetarians at the table, consider this luxurious mushroom risotto. I added peas because I wanted to introduce some color, and also because the sweetness of the peas fits right in with the flavors of this dish. But this satisfying, elegant dish is fine without peas, too. You’ll get a vibrant dash of green from the parsley added at the end of cooking.

Roasted and Whipped Bone Marrow
This is my favorite simple way to prepare bone marrow—the herbs add a little freshness and whipping makes it look slightly more presentable than it does fresh out of the oven. Spread it on toast, cook eggs or roast vegetables with it, or let it melt over your steak while it’s resting. If it’s the main event and you’re just spreading it on bread, some acid (like a squeeze of lemon or a splash of vinegar) will help cut the fatty richness.

Gianduja Truffles with Hazelnut Centers
There's not a much better gift you can give any time of year than a box of homemade chocolate truffles. They are really easy to make, and everyone is always so impressed. This variation on the basic truffle is a little nod to the Perugina Baci. Gianduja (chocolate combined with hazelnuts) is a very Italian variety that is incredibly delicious.

Bacon and Gruyère Green Bean Casserole
This version pays tribute to the classic green bean casserole but upgrades its components. The cream of mushroom soup is replaced with crème fraîche and sautéed mushrooms; bacon and Gruyère are added to the mix; fresh green beans stand in for frozen (though you could use frozen in a pinch); and bread crumbs swap in for the Ritz crackers.

Chocolate Covered Figs filled with Ganache
While living in Spain I discovered a tiny shop called Casa Gispert. They sold, among other things, the most incredible dried fruits and nuts as well as artisanal chocolates. As it was Christmas when I made this discovery, the owner suggested I try the chocolate covered figs. To my surprise, they were not only dipped in chocolate but were also filled with a rich chocolate ganache. I bought 4 and ate them on the way home. When I went back to buy some as gifts they had sold out. In an effort to spread this wonderful holiday delight, I have come up with my own version using flavored chocolate in the ganache. I like dark chocolate with sea salt, milk chocolate with cinnamon and bacon, and white chocolate with pink pepper, star anise and black cardamom.

Butternut Butter
To cut down on stove top time and to give it that full bodied roasted flavor, I roasted the butternut squash before pureeing. Mixed with apple cider, pumpkin pie spice, and sweetened by maple syrup, this is clean recipe that tastes great on crackers, mixed into yogurt, or to eat by the spoonful. It's wonderful paired with plain chevre. Gift a jar of butternut butter with a crusty loaf of bread, homemade graham crackers, or goat cheese and crackers.

German Spaetzle Recipe
My father and his parents were born in the small town of Schwäbisch Gmünd in Germany, and because of that I have been lucky enough to enjoy real German food right here in Los Angeles all my life. My Oma (grandmother in German) who is going on 96 was kind enough to share some recipes before her memory started to fade. Here is a real authentic German Spaetzle recipe that can be accompanied with a heavy dish like Rouladen or can be smothered with butter and a white cheese of your choice (my favorite is Danish Butter) for a simple meal. It requires a Spaetzle maker that can be found on Amazon or any other specialty kitchen site. I have heard that you can use a colander, ricer or just slowly pour it using the back of a spoon but I have not tried those methods (and heard some make a mess) so I recommend getting a Spaetzle maker for $6! My family has 2 makers and we used a not so common looking one when taking the pictures but its the same method for all.
