Chocolate-Coconut (Choconut!) Mousse
I created this vegan delight while making David Lebovitz's Chocolate-Coconut Sherbet (from Ready for Dessert). When removing the chilled sherbet batter from the fridge, I noticed it had slightly solidified and the texture was quite silky. I figured the addition of coconut oil would help solidify it even more, and using only coconut cream would be the key to perfect silkiness. My guesses were correct, and voila, Choconut Mousse!

This is sort of a cross between an ice cream and a mousse. It was given to me by my best friend's mom, and every time I go to her house, we eat it by the bucketful (seriously). The passion fruit puree is added because it balances out the flavors, adding a subtle tartness. Depending on the sweetness of your mangoes, you can add more or less, to suit your tastes. Passion fruit puree can be found in some larger grocery stores, or you can find it on Amazon. To make this more like an ice cream, puree everything but the cream and then stir it all together. To make it just a mango mousse, whip the cream separately, fold in the mango-passion fruit puree and chill.

Strawberry Leftover Panettone Milkshake
There's panettone everywhere. Even after the holidays, I still can't manage to keep bread at bay (ominous music plays) Moving on! So, we make do with what we've got, right? Kind of. But yes, stores are still stocked with 'price reduced' panettone loaves. During one of my endless yet glorious grocery escapades I happened upon a pristinely wrapped Pandoro Milano - seemingly, unshaken by the frantic rush of the holidays. It was G. Cova...I look for the price, thirteen dollars. Thirteen Dollars! Are you kidding me? Where was that price tag when I needed it most? Apparently, this panettone is one of Martha Stewart's favorites for making french toast. Enough mind babbling, I'm sure Martha Stewart has fine taste. I say, "You're coming with me." and throw her in my basket. I can't even pick at her on my way home - she's wrapped in beautiful Italian-esque wrapping paper and twine. I speed. Home! I carefully unwrap my loaf as so not to disturb the paper too much and reveal a humble, sophisticated mountain-shaped confection. I slice the top and marvel over the cute star shape in front of me and slowly raise it up to my mouth...divine melt. I see why this panettone is so illustrious. That kind of comfort in your belly is matched by no other (I'll eat those words later) Mom greets me in the kitchen, mouth full, crumbs and all on my face I say, with wide eyes, "You know what would be good with this? Strawberries. Holy Cow, eff that!" I reach for my VitaMix, "I'll show you."

Simplest Strawberry Frozen Greek Yogurt - no machine needed
This is a quick and creamy frozen yogurt is based on Greek (or other) yogurt with no ice cream maker needed. I got the idea from Good Housekeeping but I doubled the yogurt to make it more luscious and creamy. Still very low on the calories. (Just use 1/2 the yogurt if you want to revert to the 70 calories per serving original.) It is meant to be eaten right away before it is completely hard. But if you save some leftover, just let it sit on the counter to soften before serving.
Fragrant Kumquat Marmalade
Adapted from the recipe for Kumquat Marmalade in Alice Waters' book Chez Panisse Fruit, I used my favorite white wine as the cooking liquid. It smells amazing.
