When I was traveling in Guatemala I spent a week taking Spanish classes in Panajachel where I managed to catch the tail end of mango season. Every morning the street was filled with men and women selling ripe, juicy mangoes sliced and arranged neatly in a tiny plastic bag. You could choose to eat your mango "simple", or plain, but I always noshed on mine with salt, ground pepitas, and freshly squeezed lime juice. The recipe below is essentially a table friendly version of this glorious “mango in a bag”. A couple notes: 1. Chili powder or cayenne pepper would make a nice addition if you want a little spice. 2. I ground my pepitas using a mortar and pestel. 3. This is a recipe that works well for any meal!

Aam Ras and "Puri" is nothing but ("Aam") mango ("Ras") puree with fried Indian flatbread. You need nothing because mango puree itself justifies everything. For a little salty spicy kick eat it along with some nice Mango pickle. We would have this as lunch or dinner most of the times during summer season. Sometimes my mom would make some "Rasawala Alu" potatoes in gravy as a side dish to go with the puris. Yum! when we serve Aam Ras, we top it off with a pinch of salt and cumin powder (totally optional) and just a tsp of ghee, yes ghee. And, should I say how to eat it. Just dip your puri in the aam ras and let your spoons enjoy themselves in the cabinet and allow your fingers to get messy.

Mango-Rum Slushy
As soon as we get settled in to our vacation rental on various tropical islands, it's time to begin our holiday with a tropical libation. Mangoes and the local rum are the flavors we crave. Easy enough to leave out the rum so our kids can enjoy, as well. Sometimes I add strawberries, passion fruit, or whatever else looks inviting at the market. Don' t leave out the coconut water.
