Chunky Avocado-Papaya Salsa
This is based on a recipe in Kim Sunée’s wonderful new book, “A Mouthful of Stars” (Andrews McMeel). Her recipe is more of a salad, a fusion of Thai and Mexican flavors. I loved the idea of combining avocado and papaya, two subtle, creamy fruits, with crunchy, bright-tasting Asian pears and spicy chiles. The first time I saw the recipe I wanted to test it right away, but I didn’t have Asian pears. So I used an apple, and loved it. It’s the sweet, crunchy fruit that does the trick, and apples and Asian pears both work. There are onions in the original recipe but I’ve made them optional.

Banana-Dulce de leche on whole wheat toast
This is one of my 8 year old's favorites (we keep a daily breakfast rotation at home), and I am always happy to prepare this for him: the whole wheat bread adds complex starches, bananas are packed with minerals and the sprinkled almonds on top add good fats. The dulce de leche being my dose of Argentine morning love for him, this wholesome and yummy breakfast holds him over till lunch time, and can be fixed in 5 minutes.

Grilled Cheddar, Apple and Mustard Sandwich
I came up with this combination one day when I'd finally gotten bored with the classic grilled cheese, and I've never looked back. It's not going to solve a craving for grilled cheese with Kraft singles and Campbell's tomato soup, but I've found this classed up sandwich can prompt cravings of its own. With so few ingredients, make sure to choose ones you love. I prefer cheddar so sharp it can bite back, honeycrisp apples, and sourdough bread. For the mustard, I like "moutare a l'ancienne,' which I think just means "made like in the olden days before we had machines to properly pulverize the mustard seeds."

Apples 'n' Onions 'n' Cabbage - Oh My!
I grew up reading Laura Ingalls Wilder books and my favorite was always Farmer Boy - probably because it contained so many wonderful descriptions of food. But reading about apples 'n' onions as Almanzo's favorite dish? Yuck, right? Well, maybe as a child I thought it sounded disgusting, but as an adult I think it's delicious. Have you ever sauteed cabbage in butter? It's a revelation - it gets all nutty and mild-tasting - not sulfurous at all. Put it all together with some sliced sausage and this simple, one pot meal makes an easy and nutritious supper. This recipe makes quite a lot and it doesn't reheat very well (the cabbage gets a bit soggy), so feel free to cut it down if you're serving fewer than 4 people.
