Chicken Salad Stuffed Avocados
In my eyes anything with avocados is a WIN. Don't know what to do about leftovers, stuff it in an avocado, you can't go wrong :) This is an extremely versatile recipe, any leftovers would go GREAT!! Leftover chili? Can of tuna sitting in your pantry? Leftover salad or slaw? Leftover chicken --> chicken salad stuffed avocados. Add some Sriracha to give it a "kick" and you're in for a protein-packed treat! Made with greek yogurt, no mayo, no oil, but lots of great seasoning. The chicken salad included leftover organic roasted chicken I had done the Sunday night before. Feel free to adjust the ingredients, add more veggies, add more spices, add salsa & black beans for a tex-mex version! Endless possibilities! The PICTURE reflects my simple chicken salad made with a greek yogurt dressing, celery, roasted shallots and raisins.

Key Lime Pie Smoothie
This is a modified recipe adapted from a friend of a friend's recipe. The original recipe had more lime zest and lime juice (3-4 limes) but I chose to just add one to please my taste buds. You can certainly add more tartness as you desire but I was happy with just using the zest and juice of one lime. This smoothie was super refreshing and very filling...a great way to start your day with the bursting flavors that will wake you right up...and what a great way to use avocados!

Carrot and coriander ribbon salad
This is a very simple salad, it’s healthy, crunchy, deliciously fresh and if you believe your parents it WILL make you see in the dark. If you can get hold of different coloured carrots it will turn your salad into a fun rainbow on a plate, and all your friends will ooh and aah and think that you are totally jazzy and cool!

Zucchini and Chickpea Salad
Celebrate the summer with this grilling zucchini and chickpea salad! To contrast the tenderness of grilled zucchini, I have used crunchy roasted chickpeas. The smokiness of the grilled zucchini also pairs nicely with the salsa made out of cherry tomatoes, shallots and herbs. Use this salad as your main meal, or pair it with grilled meats!
Superfood Overnight Oats with Almonds and Goji Berries
For those that are always on the go, this is a perfect make-ahead breakfast. Combine all ingredients in a mason jar, let it sit overnight in the fridge, and in the morning grab a spoon and your breakfast and you're ready to go! Toppings are endless, so feel free to change it up everyday. Superfoods give you large doses of antioxidants, polyphenols, vitamins, and minerals; oats for fiber; raw cacao for additional antioxidants; and maca for a boost in energy and stamina to get you going through your mornings as it is rich in vitamin B vitamins, C, and E and provides plenty of calcium, zinc, iron, magnesium, phosphorous and amino acids.

Garlicky Chard
Want to take a break from kale? Give chard a chance. It’s a nutritious green and makes a great warm salad. I made this super easy warm chard-red quinoa salad in less than 15 minutes for a quick lunch. Its loaded with garlic and I topped it with tomatoes to add some freshness. You can add other veggies for more color and taste, add an egg, grilled tofu…this has endless possibilities!!

Roasted Vegetables: Butternut Squash, Celery Root, and Radish
My local market is bringing on the most lovely watermelon radishes and celery root (celeriac). Roasting butternut squash with the radishes and celery root creates wonderful, caramelized flavors of sweetness, freshness, and a tangy bitterness. The preparation couldn't be easier, and the three disparate tastes create a combination of flavors that are refreshing and surprisingly good. When you cube the vegetables, try to keep their size uniform.

Champagne Jello Shots
These adorable jello shots are perfect for any occasion, especially New Year’s Eve! I saw this recipe on Erica’s Sweet Tooth and could hardly wait to make them for NYE. They’re easy to make and look so fancy with the festive toothpicks. The guests were “oohing” and “aching” when I walked in with these cuties. Make them with any sweet bubbly wine or champagne.
For the Love of Roots and Leaves
This fun recipe was the very first recipe that I created when I wanted to "try" kale. I had read so much about how it was a Superfood and it was so healthy for me, but I didn't know how to "give it a go". I started with my favorite spices and added in some carrots and when I introduced my palate to Kale for the first time, I was super happy with this super food!

Chilled Oranges in Rum-Caramel Syrup
This easy, stylish recipe is an old favorite, adapted from a recipe in a French fashion magazine circa 1972. You can serve it as you would fruit compote for brunch, or as a refreshing, light dessert after a spicy meal. Or spoon a moat of it around a scoop of vanilla or honey ice cream or a trembling spoon of panna cotta. Recipe from Pure Dessert (Artisan, 2007)
