Salt-Roasted Pears and Apples with Caramel Sauce
I would like to share a delicious recipe for a Holiday snack or a light desert, which I learned while watching the show “Mad Hungry” a few days ago and made it this morning. I did not have Bosc pears and roasted 7 small Anjou pears. They came out perfect and since I was left with all the salt and inspired by the result, I decided to roast 6 small Honey Crisp apples and even 1 Kiwi, which were starring at me from the fruit vase. As you can see in the photos, it is a fantastic and versatile recipe not only for pears. Thanks’ to Lucinda.

Abuelito's Super-Special Punch
I promise, this Special Punch recipe will make you very popular with kids of all ages. For an adult version, try adding a hint of rum. Cheers!

Blood Orange and Ginger Punch (Cocktail)
Blood Orange juice & Ginger ale are paired with lime and, for the adult version, liquor, vodke or rum, to create this wonderful Cocktail recipe. Cheers!

Leftover Cherry Dip
I love fresh cherries in the summer...but I never seem to eat them all before they start to dry out. I used "leftover" cherries that I wouldn't have eaten alone in this dip / chutney / compote. I hope you enjoy:)

Evergreen
Very Belini like, not too alcoholic, full of fruit, blended using a fruit slush rather then ice to cool it.

Orange Green Tea Sparkler
Based on my neighbor's recipe she often throws together involving iced green tea and orange juice. I add some sparkling water for a little fizz AKA the sparkle.

Orange Freeze Float
On particularly hot days, my mother would break out the blender and make this frosty recipe for orange freeze floats. This is the perfect sherbert treat!

G.O.P. Up in Flames
Piqued your interest, or maybe your ire? The G.O.P does not refer to the Republican Party, but the Ginger Orange Pomegranate flavors of the drink. When the “up in flames” contest was announced, I knew I wanted to make a flaming pousse-café. I looked through my liquor selection, and determined I wanted to combine Domaine de Canton ginger liqueur with PAMA pomegranate liqueur. I needed a bridge (both in color and flavor) and since I had some fresh oranges I added orange juice to the mix. The flavor combo worked well, but was a bit sweet and not boozy enough. The color combo was nice, but the PAMA ended up in the middle instead of on top – I wanted more of an ombre effect with clear on bottom, orange in middle, and red on top. Vodka to the rescue on both counts. By mixing PAMA and vodka I was able to layer it on top of the orange juice and improve the balance of flavor. A small layer of hundred proof vodka on top gave me the flames I wanted. Bottoms up! - hardlikearmour

Roasted Butternut Squash with Orange Juice
All you have to do in this Juice Butternut Squash is cut it open, scoop out the seeds, and you’re ready to roast. Here’s my favorite recipe for Butternut Squash.

Super Speedy and Simple Sumer Sangria
Last Minute Creations are the best! I was relaxing outside on my porch about to have some dinner and halfway through my meal, thirst overwhelmed my palate. I got up, and walked over to the kitchen to fetch a drink. I saw an opened bottle of wine, and cans of seltzer and knew that I had some orange juice in the fridge--so I thought, hmmm...looks like I can make some sangria.
Fleur de Lys
Sorta like a Mimosa, but with a little Pernod and Cointreau. I know it sounds weird, but trust me, it's delicious.

Honey Mustard Chicken Breast
This is an adaptation of a recipe by John Bishop and Dennis Green. Serve hot or cold, it's good either way. I prefer Inglehoffer's Original Stone Ground mustard for this dish. 6 small bone in, skin on chicken breast OR one 3 pound chicken, cut into parts, can be used in place of 3 large chicken breast halves.

Flirtini
Do we really need to wait until the end of the summer for a good cocktail? I like to think of this as the "just because it's Monday" cocktail. There are several variations of this Flirtini drink, that I think was originally featured on Sex and The City. I always err on the simple side. This is ridiculously easy to make (and drink too much of.) Enjoy!

Dessert Vinaigrette For Figs
Vinaigrettes lend lightness and sparkle to food, but they generally land before the dessert course. But here, a warm orange vinaigrette livens up figs for a light and delicious dessert. This easy recipe, which was inspired by one from Michael Moorhouse, the pastry chef at Blue Hill at Stone Barns, comes together quickly.

Whipped Cream Orange Marmalade Cake

Braised Pork in Orange Sauce (Carne de Puerco a la Naranja)

Grilled Shrimp With Spicy Slaw
Lightly charred, citrusy grilled shrimp are the star of this quick slaw made from a pile of thinly sliced, crunchy green cabbage tossed with a sweet-tart citrus dressing. Cilantro adds bright flavor, and this dish has a bit of spice in the form of fresh jalapeños. They range quite a bit in their heat level, so start with a small amount and add more as you see fit. (You can also add julienned mango to tame the heat, if you like.) Feel free to substitute any quick-cooking protein for the shrimp; grilled chicken thighs or slabs of grilled tofu would work wonderfully. The cabbage will soften as it sits, so serve soon after it has been dressed to maximize its crunch.

Citrusy Couscous Salad With Broccoli and Feta
Sweet, spicy and citrusy, this pasta salad is a make-ahead dish that works hot, cold or at room temperature, and can be served as is or with chicken, salmon or shrimp. Fresno (or jalapeño) chiles soak in a tangy honey-and-citrus dressing to soften their bite and infuse the dressing with heat, giving the overall dish a slightly sweet and spicy flavor. Juicy pieces of orange impart a sunny, vacation feel to the look and taste of the dish, while the cumin gives the dressing a warm earthiness.

Pernil-Style Roasted Chicken Thighs
Pernil is a Puerto Rican slow-cooked marinated pork shoulder dish in which the pork is roasted for hours until succulent and crispy-skinned. The flavors of pernil become accessible on a weeknight with the use of quicker-cooking chicken thighs. The chicken pieces are coated in a garlicky, oregano-and-citrus rub that combines orange and lime juice for a sweet-sour hit. Serve the juicy chicken with rice or tucked into corn tortillas; a simple green salad or cabbage slaw would also make a nice accompaniment to complete the meal.

Mexican Martini
Originally the Mexican Martini was just a large margarita in Austin, Tex. But the presentation calls for the margarita to be served in a martini glass, with olives on a spear. Because it is about twice as large as a regular drink, customers are usually given the cocktail shaker and invited to pour it themselves.

Rum Barrel
This is “one of Don the Beachcomber's baroque 1940s masterpieces,” Jeff Berry says, and he didn’t change a thing when he put it on the menu at Latitude 29. Yes, that’s quite a long list of ingredients, but they coalesce into a memorable drink and a classic, quintessential tiki experience.

Pressure Cooker Sticky Tamarind Baby Back Ribs
These gingery sweet-and-sour glazed ribs are tender and intensely flavored — and pretty much impossible to stop eating once you start. The sauce also works well on spare-ribs if you’d like to substitute those here. Just reduce the cooking time by a few minutes on the pressure setting, or as much as an hour if using the slow cooker setting.
