Bacon Tomato Chawan Mushi

We eat a lot of chawan mushi in this house. There is nothing like the silky custard with slightly sweet and smokey broth topped with delicacies like crab, lobster or just a really good roasted shiitake sliced paper thin. I recently tried David Chang's bacon dashi which substitutes bacon for the bonito flakes and could not shake the idea of taking it a step further. In order to replace the seaweed I needed some other umami booster and pondered the tomato. I wanted the custard to stay a lovely pale yellow and settled on making a bacon-infused tomato water in place of the broth. This will obviously be a better dish to make at the end of summer when tomatoes are abundant, but I couldn't shake the idea and gave it a go. The garnish, I think, is crucial, but could be a variety of options on hand.

BLT Wrapped Bites with Feta Cheese

I love cherry tomatoes and especially love the varieties available. With a box of cherry heirlooms, this preparation came to mind. The trick was to come up with a bite that would be easy to prepare and not wind up on everyone's laps or my floor. Serving the bites enveloped in romaine lettuce leaves makes it easy for eaters to wrap up the filling, and enjoy the feeling of a BLT. I prefer using feta cheese to blue cheese or chevre - blue cheese will be sharper in flavor; chevre milder.

Sage and Walnut Roasted Porkchop

Preheat your oven to 375F and place an ovensafe pan inside to temper. Season your porkchop with salt and pepper, and press a sage leaf onto one side of the porkchop. Take the tempered pan (carefully) out of the oven and set on a low-medium flame and place face down into a dry hot pan. Allow some light carmelization on the face down side before turning over and allowing the other side to reach same color (about 3.5 - 4 mins) then add walnuts lightly handcrushed into the pan and place in the oven. In about 15 minutes check the porkchop, testing with a sharp knife by placing into the center of the porkchop and feeling the knife, should feel like warm bathwater for medium rare, leave 3 mins longer to have medium and 3 more to be well. Pull pan out of oven and add two tablespoons of butter to the pan and add another fresh sage leaf and garlic clove (skin on). Baste with butter and sage leaf until you have a simple pan sauce and serve.

One day i was having a bunch of friends over for some drinks, i had an incredible craving for bacon, and wanted to do some wrapped shrimp, but decided against it because i was already over budget. I was walking around looking for a substitute, and talking it over with my mom. I was looking for something kind of sweet to complement the bacon and we decided on carrots! Best decision ever! Tomatoes are a summer staple, and, for the most part, the large heirlooms are different than but equally enjoyable to their runty cousins. However, I find that cherry tomatoes shine best either raw (like savory candy, pints of which can be wiped out in minutes) or very lightly cooked so they pop or explode in the mouth with a saucy goodness that a bigger sliced version simply lacks. Here is my favorite quick and easy version of the latter. This dish is a wonderful accompaniment to chicken, fish, or shrimp.
