Crisp at the edges and creamy in the center, this dense, cheesy cornbread from I Love Paraguay, a Paraguayan restaurant in Queens, New York City, has a texture similar to bread pudding. Paraguayans serve it for many meals in the country, but especially alongside asado (grilled meats). Though the bread is extremely popular, its true origins are murky. Many people will tell a similar story: In the mid-1800s, when Carlos Antonio López was the president of Paraguay, he liked to eat corn soup. But his chef made a mistake and added too much cornmeal, and instead served the president a corn bread. The president reportedly loved it so much that he named it sopa Paraguaya. But others say that the bread has deeper roots from the Cario-Guaraní, a group of Indigenous people in Paraguay, who made a similar type of cornbread.

Ferni (Iranian Rice Flour Pudding)

Ferni (also called fereni or firni) is a nostalgic and comforting rose-scented Iranian pudding thickened with rice flour. Variations, with different names, can be found in Southeast Asia, Central Asia and beyond. This version is adapted from Fariba Nafissi, an Iranian pastry chef and the owner of Zozobaking in Los Angeles. Ferni can be served cold, as a delicately sweetened dessert, topped with fresh or dried fruits. It can also be served warm on chillier days. In Iranian culture, the hot version is used to comfort the body during an illness, like a sore throat or a stomach ache, according to Ms. Nafissi. The infusion of rosewater is one of the hallmarks of ferni, but you can also use the same amount of orange blossom water, or vanilla extract (about 1 teaspoon), if you prefer. The pudding has a custardlike consistency and comes together very quickly. But you will be required to continually whisk so that the pudding is smooth and does not stick to the bottom of the pan – resist the urge to walk away as it thickens. Ms. Nafissi recommends using a 2-quart nonstick saucepan. (If using another type of pan, lower and adjust the heat accordingly.)

Here, bone-in chicken legs are coated in a mix of turmeric, ginger and garlic and nestled into a pan of scallion-flecked short-grain rice. As it all roasts, the spiced chicken fat seasons the rice, which turns especially crisp where it meets the edges and bottom of the pan while staying soft and chewy on top. Dabbed with more turmeric-ginger mixture at the end, it’s a richly flavored and textured chicken and rice dish all made in one pan.

A vibrant mix of sushi-grade fish, sticky rice, crunchy vegetables and creamy avocado drizzled with spicy sriracha mayo, a poke bowl is just as much fun to look at as it is to eat. Poke, which roughly translates “to cut crosswise into pieces” in Hawaiian, was born out of a no-waste scenario. While the exact timeframe is uncertain, Polynesians inhabiting what is now the Hawaiian Islands chopped leftover cuts of their daily catch into bite-sized pieces and seasoned them with salt and other ingredients. In the late 1800s, Japanese immigrants added soy sauce and rice to the dish. Eventually, poke made its way to the mainland and evolved into a customizable dish: The toppings listed here are just suggestions, so feel free to get as creative as you like, just make sure there is a balance of flavors and textures. Fresh fish is the star and should be sushi-grade and marinated for at least 1 hour. For a vegetarian version, try marinating cubed, firm avocado, and bulk up on the other ingredients. In the time that it takes to marinate, you can prepare the rice, or make use of leftover rice (you’ll need about 4 cups cooked). Don’t skip the spicy mayo to bring it all together.

This simple butter pilaf is a delicious alternative to your basic stovetop rice, without much additional work. A pilaf consists of grains that are toasted in fat before cooking in a liquid. The step of cooking in fat is called parching, and it prevents the grains from clumping while adding flavor from both the toasting and the fat itself. Pilaf can be made with almost any grain, fat and liquid, and is supremely versatile. For extra flavor, swap out the water for broth or dashi. Level it up with aromatics, like chopped onion or garlic, sweated (gently cooked) in the fat before parching the rice. Add spices, like turmeric or paprika, to toast along with the grains of rice. Stir in quick-cooking meat, like diced chicken or peeled shrimp, and vegetables, such as peas or cauliflower, after adding the water to steam along with the rice. Toss in herbs, like a spring of thyme or a bay leaf, to perfume the grains.

This cleverly named dish, which gets its moniker from the spiky grains of rice that protrude from the meatballs, became popular during the Great Depression, when rice was often added to expensive ground meat as a way to “stretch” it. It’s still a useful budget tip — or an easy way to eat a little less meat — and you might find you like these lighter meatballs even better than the traditional sort. Some recipes call for uncooked rice, but using cooked rice ensures that you won’t end up with crunchy grains in an otherwise tender meatball. This recipe uses ground beef, but feel free to swap in ground turkey, pork or chicken. Like most tomato sauce-based dishes, these meatballs freeze well: Cool completely, then transfer to an airtight container and freeze for up to 3 months. Thaw overnight in the fridge and reheat on the stovetop, covered, over medium-low heat. Serve the meatballs with a simply cooked green vegetable, such as sautéed spinach or steamed broccoli.

During the Christmas season, Venezuelans typically gather with their families and team up to make one of the most labor-intensive dishes of the entire year: hallacas, which are similar to Mexican tamales or Puerto Rican pasteles. This multigenerational recipe from Isbelis Diaz and her son, Ivo Diaz, is served at Casa Ora, their fine-dining Venezuelan restaurant in Brooklyn. Ms. Diaz’s great-grandmother learned this recipe from her neighbor nearly a century ago; it has passed down to each matriarch of the family. It starts with a deep red oil made from annatto seeds that is used to flavor the pork filling and masa for the hallacas. Before opening Casa Ora, Ms. Diaz would bring the hallacas — which are double-wrapped in banana leaves and tied with cotton twine — to businesses and events all throughout New York City, hoping to create a clientele. Today, they’re on the menu as an appetizer throughout the year, with a pork or vegan filling. The dish is typically served with other sides, like pan de jamón, but it makes a quick lunch or light supper. Though it’s project cooking at its finest, this recipe yields about 25 hallacas that can be frozen for future feasts.

The cornstarch is key, and it helps thicken the sauce as it cooks. Chicken or vegetable stock makes for a richer sauce, but feel free to use water (start with 1/4 cup) instead. On Diwali, people in India light up their homes, say prayers and go door-to-door exchanging boxes of snacks and sweets. In the northern part of the country, some people fry fresh onion bhajiya, or crispy onion fritters, as an appetizer or snack for visiting guests. Palak Patel, the author of “The Chutney Life: 100 Easy-to-Make, Indian-Inspired Recipes” (Abrams, 2023), included her mother’s recipe in her cookbook, which represents Ms. Patel’s life as an Indian American. Her mother is from Raipur, where the street food is dipped in cilantro chutney, but her children and husband like to dip the fritters in ketchup. Depending on the region, bhajiya can also be called pakora or bhaji. They’re often eaten as a snack during monsoons and served with masala chai.

The history of sesame chicken, a delightful dish of battered and fried boneless chicken pieces in sweet and sour sauce, is a bit unclear. While it’s similar to General Tso’s, and la zi ji (or firecracker chicken), a spicy Sichuan dish of chicken, sesame, chiles and Sichuan peppercorns, sesame chicken skews sweeter, thanks to a heap of brown sugar and no chiles. As the name implies, the dish’s defining characteristic is the prominence of sesame flavor, owing to the toasted sesame oil in the marinade and the seeds sprinkled on top. Serve it piled on top of white rice and steamed broccoli.

The size and quality of the rice matters in this classic pudding: A medium-grain rice is starchy enough to thicken it, but it won’t soften so much that it completely disintegrates. Using a 2-quart saucepan is also important. If the pan is larger or wider, the liquid will evaporate faster than the rice cooks. If you prefer a looser pudding, or plan on serving it cold (it thickens as it sits), remove it from the heat as soon as the rice softens; or cook it a bit longer if you like a thicker pudding. For an extra-rich dessert, stir in egg yolks and butter, or further elevate it by adding some rum-soaked raisins.
