Traditional pretzels are dipped in a lye solution to give them that quintessential pretzel tang and gorgeous color — but this fun home-baking project relies instead upon baking soda. Food-science writer Harold McGee suggested baking the baking soda before using it to mimic lye more effectively. It takes a little bit of extra time, but very little extra effort, and the results are well worth it: These pretzels are deeply burnished and flavorful. Before twisting the dough, if your ropes are a little thicker at the ends, you can trim the thicker bits and cook them separately — following the same procedure as for the pretzels — to make pretzel bites. Pretzels are best enjoyed the day that they’re made. You can freeze leftovers for another day and reheat them tucked in a foil packet in the oven, but the results are never quite as good. Instead, halve the recipe and make only five if 10 is too many for one day.

If it’s cooked for too long, it smushes together; not enough time and it’s grainy and hard. Different types of rice require different cooking methods, too. This recipe, specifically for long-grain basmati rice, boils it down to a science. The rice-to-water ratio used here is 1 cup rice to 1 1/2 cups water, but thoroughly drained rice, heat levels, cook time and resting time can all impact results. Even the size of the pot matters; you’ll want to select a small one in which the water level rises an inch above the rice level. Follow the steps exactly and cooking long-grain basmati rice is no longer an experiment but a formula.

Take a stack of sturdy, nutty-tasting fresh tofu sheets (gāndòufu in Mandarin) and cut them up into noodle-like ribbons to combine with cucumber, cilantro and a spicy, garlicky sauce. The stunningly good, satisfying result is a northeastern Chinese treat, a favorite of cookbook author Hannah Che. This recipe was adapted from her debut, “The Vegan Chinese Kitchen” (Clarkson Potter, 2022). Look for vacuum-sealed packages of tan-colored, nubby gāndòufu, often labeled as “soy tofu sheet” in the refrigerated tofu section in Chinese markets. Enjoy this salad with dumplings or a cozy soup. Change things up by stuffing it into a baguette or featuring it in lettuce wraps.

It’s stretched with a rolling pin, then allowed to sit uncovered overnight until it has lightly dried to the texture of a flour tortilla. This is the secret to getting the crunchiest, most cracker-crisp crust, and it also makes topping and moving the pizzas a snap. Give this recipe a try. If you do, there are a few things to note: Both mass measurements in grams and volume measurements in cups and spoons are provided. It’s strongly advised to use the mass measurements for everything, but at the very least, use it for the flour. Because flour is compressible, a cup can vary in weight by as much as 50 percent, completely throwing off the hydration level of your dough.
