Quinoa & Pine Nut Salad
The first time I tasted this salad at a party it had walnuts in place of pine nuts and didn't have the avocado. I made it the original way a couple times but knew that there had to be another nut that would go better. I tried toasted slivered almonds (which was good, but not perfect) then I tried the pine nut AKA Pignolia. The flavors come together wonderfully! I would recommend making this at least a couple hours before you eat it so it can chill.
Jicama and Mango Salad
A beautiful vibrant salad, refreshing to the palate and a perfect pairing to summer BBQ meals like mahi mahi tacos! Eat it as a side or add it as a slaw to your tacos. It all comes together with a lime, jalapeno, and cilantro vinaigrette. The sweet and spicy tang of the dressing, and crunch of the jicama is a perfect flavor to satisfy any taste bud during the hot days!
Chicken Salad Stuffed Avocados
In my eyes anything with avocados is a WIN. Don't know what to do about leftovers, stuff it in an avocado, you can't go wrong :) This is an extremely versatile recipe, any leftovers would go GREAT!! Leftover chili? Can of tuna sitting in your pantry? Leftover salad or slaw? Leftover chicken --> chicken salad stuffed avocados. Add some Sriracha to give it a "kick" and you're in for a protein-packed treat! Made with greek yogurt, no mayo, no oil, but lots of great seasoning. The chicken salad included leftover organic roasted chicken I had done the Sunday night before. Feel free to adjust the ingredients, add more veggies, add more spices, add salsa & black beans for a tex-mex version! Endless possibilities! The PICTURE reflects my simple chicken salad made with a greek yogurt dressing, celery, roasted shallots and raisins.

Orange Avocado Carpaccio
Citrus helps bring out the avocados creaminess and cuts the buttery-ness. Super simple salad! When you DON'T want to wait for your avocados to ripen!!

avocado and egg salad
This avocado and egg salad is a perfect marriage of winter seasonality: ripe avocado and citrus. I first had this salad with a lemon picked off the tree in a backyard in Tel Aviv, an avocado from the Shuk ha Carmel and a creamy hard-boiled egg. Together with some salt and a fork, the ingredients blend together to form a delicious salad, spread, dip, or however you want to eat it. It can be spread on a piece of toast or eaten all by itself. If you really like lemon (as I do), I recommend adding an extra half lemon.

Pesto Pasta Salad
Garlicky pesto and sweet peas team up with mild mozzarella and al dente pasta for a super-quick and super-tasty pasta salad. Leave as-is for a meatless meal or side or add chunks of pre-cooked chicken or shrimp for a meal in a bowl. Change the peas to any small green vegetable you'd like, as well.

Carrot and coriander ribbon salad
This is a very simple salad, it’s healthy, crunchy, deliciously fresh and if you believe your parents it WILL make you see in the dark. If you can get hold of different coloured carrots it will turn your salad into a fun rainbow on a plate, and all your friends will ooh and aah and think that you are totally jazzy and cool!

Zucchini and Chickpea Salad
Celebrate the summer with this grilling zucchini and chickpea salad! To contrast the tenderness of grilled zucchini, I have used crunchy roasted chickpeas. The smokiness of the grilled zucchini also pairs nicely with the salsa made out of cherry tomatoes, shallots and herbs. Use this salad as your main meal, or pair it with grilled meats!

Molly Wizenberg & Brandon Pettit's Red Wine Vinaigrette
This is a trick for making any old vinegar taste like something fancy, with just a splash of red wine. This red wine vinaigrette recipe is delicious.

These delicious beans are ridiculously easy and can be used as a main dish, side dish or salad -- depending on your mood or meal.

Grapes and Capers Salad
Super sweet red grapes pair with salty capers in an addictive way. A sprinkle of parsley adds a pleasantly clean note, but this salad is equally delightful without it.

Sugar Snap Pea Salad
In this unusual summer salad, funky, creamy Camembert and crisp, juicy sugar snap peas unite make a texturally complex and very flavorful dish. You can use any washed rind cheese here as long as it’s ripe enough to be spread on a plate. If you can’t find a gooey-centered cheese, you can substitute a creamy goat cheese instead. Pea shoots make an ideal garnish, echoing the flavor of the sugar snaps, but if you can’t get them, use any baby green or micro green in its place. If you want to work ahead, you can blanch the peas and mix up the dressing several hours ahead. But don’t combine the salad ingredients until just before serving. In this dish, freshness is key.

roasted sweet bell pepper salad
a famiglia tradition for years, this is one of my favorite summer recipes to eat with pretty much any protein or vegetable sides.

A Healthy Snack – Roasted Lentils
One of my favorite snacks during Indian picnic was tareli dal – fried lentils mixed with cilantro, lime juice and onions. The roasted recipe tastes as good.

Quick, easy and flavorful are the key words to summer sides! I was grilling a pork tenderloin one night and wanted something to go with it that was as little work as possible with the most flavor, this is it for sure!!!!
Raw Vegan Cauliflower Tabbouleh
This is my go-to dish for last-minute party dishes. Don't need to turn on the oven or stove. Made with simple ingredients and so refreshing. A definite crowd pleaser! Make the dish ahead of time to allow the salad to marinate in the dressing. Tastes better as it sits in the fridge. Added boost of protein: hemp seeds.
