3-Bean Good Luck Salad With Cumin Vinaigrette
This is a colorful variation of the black-eyed peas salad I always serve at my New Year’s Day open house. You can cook the black beans and red beans together or separately. The black-eyed peas cook more quickly so should be cooked separately.

Simplest Salad Ever
I had this salad a few years ago while on a two week "get away by myself" to a French language and cooking school in Provence . Yes….it was wonderful. The salad wasn't even one of our cooking school recipes…it was just what we ate at several family style meals and it remains my favorite take away from those two weeks. It's hardly even a recipe…and so minimalistic that it requires the very, very best ingredients. Amazingly there is no acid in this salad and it isn't missed at all. It's as perfect with a complicated dinner as it is with some cheese and bread in front of the fire place. It even goes well with wine! I think of France every time I fix it. Bon Appetit!

Halloumi, Fig and Pomegranate Salad
Fresh figs has slowly become one of my favourite fruits. It's easy to eat, with no seeds and no peeling. It is perfect for a refreshing and easy to make salad. There's nothing complicated about this dish. The only cooking involved is grilling or pan-frying the halloumi slices. So if you are too busy at work and have no mood to cook a full on hot meal when you get home, this will be a good option. Cut, grill, toss, plate and eat. Simple.

Heirloom Tomato Stack
Among the many heirloom fruits and vegetables grown today are beets, carrots, corn, dried beans, lettuce, and potatoes as well as tomatoes. Without human intervention, we are able to grow a tomato that tastes the way it was intended to taste. I think they taste like a juicy summer watermelon and it’s wasteful to prepare them with much more than salt and pepper. The balsamic vinegar you choose for this should be aged a minimum of 6 years, but the older the better.

Niçoise Salad With Basil and Anchovy-Lemon Vinaigrette
Here is a riff on a classic French salade niçoise. Traditionalists drape anchovy filets across the finished salad, but here, they're minced and used only in the dressing. Anchovy admirers can certainly add more for garnish — and anchovy avoiders can simply leave them out. The only cooking is boiling the potatoes and haricots verts, which can be done together in the same pot. Add a jammy egg or two if you like. Dressing the vegetables while warm helps them absorb all the good flavors more deeply, making this a salad that manages to be intense and light at the same time.

Green and Wax Bean Salad With Tomato Vinaigrette
This recipe calls for using past-their-prime tomatoes to make a vinaigrette by halving them across their equators, scooping out the seeds and grating the flesh on the large holes of a box grater. Seasoned with salt, vinegar and olive oil, it makes an flavorful dressing. Here, it's tossed with green and wax beans, sliced kalamata olives and torn basil leaves for a summer salad that's delicious cold or at room temperature. The vinaigrette can also be used as a crostini topping with white anchovies and fried capers, or in the base of an agrodolce to serve with fish or chicken.

Smashed Kale Salad
Guacamole re-incarnated as a salad. Creamy avocado hand-"smashed" into hearty kale leaves, topped with onion, cilantro and fresh-squeezed lime. Even the kale averse will crave this one.

HOME MADE POTOTES SALADE
this is from my mom, old fashion, depending how much you want to make and how much company you't having, boil pototes,eggs, cut up onion celery, make sure the eggs and pototes are cold before you mix all ingerents, other wise you have mashed salade.

This salad is more of an idea than a recipe. I hate measuring, which is why I generally don't post recipes on the site. But I was so pleased with this simple yet delightful combination of flavors that I figured I'd share--if only to inspire others to create their own fresh take on this summer side. I served the corn salad with halibut, but I'm sure it would taste great with trout and almost any other white fish or protein, or taco, for that matter. All measurements are approximated as is the serving size. I wouldn't worry, though. This salad would be very hard to mess up if you use the guidelines I've provided below. Enjoy.
