Braised Whole Belgian Endives (Indivie Intere a Crudo)
This is a Roman recipe from Ada Boni's Italian Regional Cooking, a 1960s cookbook. It's a classic side dish to go with some roast beef or other roast vegetables. Extremely low maintenance, just throw everything together in a pot and cover -- just cook it very, very slowly and gently, and remember to take a peek every now and then. Mint is a really typical Roman herb, but you could basil or fresh oregano for the mint leaves. You can prepare this ahead of time and simply warm it up gently in the same pot before serving.

Lafayette Fizz
Sirop de citron is a lemon syrup made by combining the juice of a lemon with the zest of said lemon. Using a single lemon will yield enough syrup for a few cocktails, but the recipe can be multiplied easily. I generally make a batch using 6-12 lemons, depending on the need.

Pig Pulled Over
This recipe serves 16, so living on my own it means two weeks of pulled pork sandwich for lunch. But when each subsequent sandwich surpasses the previous, that can hardly pose a problem. The choice of fruit juice is arbitrary, but I like mango because it reduces into the richest glaze. This method of making coleslaw is inspired by the Taiwanese pickling technique of first making a vinegar simple syrup, then pouring the hot syrup over the vegetables and letting it sit for three days. The result is something incredibly flavourful with a gutsy balance of acidity to cut through the pork’s fattiness.
Carnitas + Bean Tostadas
Super basic pork shoulder/butt roast, along with a basic peruvian + pinto bean recipe. Both of them dressed up by the latter turned into refried beans and all of it topped with a semi-homemade avocado salsa verde.

For the Love of Roots and Leaves
This fun recipe was the very first recipe that I created when I wanted to "try" kale. I had read so much about how it was a Superfood and it was so healthy for me, but I didn't know how to "give it a go". I started with my favorite spices and added in some carrots and when I introduced my palate to Kale for the first time, I was super happy with this super food!
