HARRY POTTER'S PUMPKIN PASTIES

My boys discovered this recipe on an internet search for Harry Potter recipes. Harry Potter eats these treats on the Hogwarts Express. They are, indeed, little pumpkin pastries. This is a very simple recipe - the original calls for store bought cookie dough, but I thought I'd jazz them up a bit by using Mrs. Larkin's "Best Chewy Sugar Cookie" recipe.

Radish & Cucumber Salad

In Russian you call someone “rediska”, which means radish, when they’re naughty and misbehaving. At least that’s what my mother does. I never could understand why, but perhaps it’s because radishes are sharp and peppery. Anyway, being called a radish doesn’t hurt my feelings any because I happen to love radishes. I grew up eating this cool and refreshing radish salad, and as far as I can tell, it’s a Russian classic. My mother makes it with Kirby cucumbers, but I usually use English cucumbers because they’re much easier to find. And Mom never used the dill, though it is a common addition. I can’t remember what Mom served this with, and she’s being a radish and not answering her phone right now so I can’t ask, but I think it’s great on the side with roast chicken. One large bunch of radishes is usually enough to make the recipe. - Lucy Vaserfirer

Asian (hoisin sauce) and Mexican (jalapeño) combine in this bright summer salad, which takes advantage of a seasonal favorite, watermelon and the ever-reliable cucumber. Flat-leaf parsley adds specks of deep green, and pistachios add crunch.

Layered Vegetable Torte

Getting this vegetable torte right takes a little time. You really must grill (or pan-grill) or roast all the vegetables well — they have to become quite tender — before assembling the torte. Ultimately, you want the vegetables to almost melt together. Grilling is the technique of choice because it gives the vegetables a hint of smokiness.

Bozena’s incredible summer squash soup

This is my aunt’s easy secret soup recipe. It feels so velvety, creamy and decadent yet it is healthy and simple to make. She lives in the South of France and tells me she uses any vegetable she finds in her garden to make this soup. I’ve been making it with organic zucchinis (green and yellow) and its been very successful!

Vinegar-glazed zucchini

A family friend made this when we visited her Tuscan villa, as part of a meal that also included wild arugula picked from the hillside, and oil and vinegar from her olives and grapes. Needless to say it’s never tastes quite as good in my plebeian kitchen, but it’s still pretty yummy!

Zucchini Slivers

I have yet to meet a single person that can resist these fried gems. Slivered zucchini is dredged in flour and then fried. A generous sprinkling of sea salt as soon as the slivers are out of the hot oil is the perfect final touch. You can serve these as an accompaniment to meat or fish, you can serve it as a garnish, and you can even make it as finger food for a party. It's a great way to use all that zucchini from the garden and it works well with green or yellow zucchini.

EASY, BREEZY BUTTERNUT SQUASH

I discovered this dish earlier this year at Los Angeles restaurant, Nick & Stef's. Everyone at our dinner party loved this recipe! I so much so that I called the restaurant the next day to ask the chef if he'd share his recipe with me... lo and behold... he was kind and gracious enough to do so. Feel free to play with different seasonings that you really enjoy. Can even combine with rice or pasta. However, admittedly, I love it just the way it's described below... Bon Appétit!

Oven Fried Squash Rounds

My Great Aunt taught me how to make this, so I'm guessing it is an authentic southern recipe! I like it most because you can stretch a few squash to go a long ways! It is also good with any of the squashes - but, my family prefers it most with yellow squash. Even my kids eat it.

Cucumber Sherbet

This sherbet is cool as a cucumber (sorry, couldn't resist), takes very little time to make, and is much more delicious than I expected! I was inspired to make a frozen dessert featuring cucumbers after seeing drbabs recipe for cucumber mint ice cream, and I'm calling this a sherbet because it's got a little dairy in it...you can leave the creme fraiche out and have sorbet instead (but I like how the creme fraiche balances the honey). - WinnieAb

Cucumber Agua Fresca

This translates into cucumber fresh water and a better name could not be found. Because refreshing with a citrus zing is exactly what this is. I prefer this unsweetened, but I have a friend who adds a tiny touch of honey to his glass, which is nice too (a little vodka wouldn't hurt either!) - SippitySup
