Caribbean Coconut Milk Corn on the Cob
This is my dad's recipe from Trinidad. While my mom did most of the cooking, it was my dad's job to make corn on the cob. He did so perfectly in coconut milk.
Raw Vegan Cauliflower Tabbouleh
This is my go-to dish for last-minute party dishes. Don't need to turn on the oven or stove. Made with simple ingredients and so refreshing. A definite crowd pleaser! Make the dish ahead of time to allow the salad to marinate in the dressing. Tastes better as it sits in the fridge. Added boost of protein: hemp seeds.
5-Ingredient Broccoli Stem and Kale Salad with Toasted Hazelnuts:
Don't know what to do with those broccoli stems? Make this refreshing, crunchy, spring or summer salad to share at your next family picnic or gathering. Just 5 main ingredients and can be whipped up in 30 minutes or less!! Freshly roasted hazelnuts add an extra crunch element to the salad.

A Piece-a Pizza Corn!
This is sort of a silly recipe, but a fun way to use the corn which we will no doubt be up to our ears in within the next couple of months (pun 100% intended). The proportions can easily be adjusted to your liking. The finished product is ultimately an interplay of sweet corn, tangy tomato, and salty cheese - and tastes almost like a piece of pizza!

Pronto Pesto Corn on the cob
Why butter your corn on the cob, when you can really give it flavor with Pesto Sauce
Bacon Wrapped BBQ Corn
This is on the grill, a great addition to the average BBQ. It's not the same old corn on the cob, great as it is, this just takes it HIGHER!!!

Pickled Radishes with Black Peppercorns

Sweet Corn Ice Cream
Nothing beats Colorado sweet corn! A dry climate means the corn is less watery, making each kernel pack a more sugary, corn-y punch. I like to serve a scoop of this ice cream on top of half a grilled peach!

Muhammara / Roasted Bell Pepper and Walnut Dip
Roasted bell pepper and walnut dip -specialty from Middle East

Raw White Corn and Arugula Salad
There is nothing better than sweet corn in the summer. This is a simple salad that features this warm weather staple. I love to make it as a side for barbecues and picnics.

Radish and Butter Tartine
Don't mess with perfection.

Perfect Corn Soup
Sweet corn kernels are stripped of their cobs and blended with a lovely amount of homemade corn stock. After straining through cheesecloth, it is thickened on the stove like a custard. Served in the summer evenings or for lunch, I top mine with shaved summer truffle or top with fresh herbs.

Ramps on Toast with Poached Egg and Ajvar
When I opened up Bon Appetit's April issue and saw a beautiful, open-faced sandwich of sauteed ramps and a poached egg, I had to recreate my own version. This recipe is based on the BA sandwich but with key modifications -- namely, the addition of Serbian "ajvar." Ajvar is my absolute favorite condiment of all time and its smoky, sweet quality plays well with the charred ramps and the luxurious egg yolk of a perfectly poached egg. If you can't find ajvar, substitute goat cheese, harissa, tapenade, salsa, or other condiment of choice. Either way, try this while ramps are still available.

Avocado, Lox, and Pickled Onion on Crispbread
Take a classic bagel with cream cheese, lox, capers, red onions and just tweak everything a little bit and you get this. Except the lox. Don't tweak the lox. Lox is perfect just the way it is.

Springtime Sweet Potato Soup with Coconut and Lemongrass
A light, fresh soup with minimal ingredients. A splash of cider and perfume from lemongrass (or just a squeeze of lemon) make this a bowl of sunshine. Serve with Sriracha for those who want to add a little heat.

Carciofi alla Giudia – Roman Jewish-Style Artichokes
In this Carciofi alla Giudia recipe, the trick to getting the combination of crisp leaves – nutty and golden – and a tender interior comes from frying twice.
Isreali couscous with mushrooms and scallions
The contrast of the bright scallions and rich, inviting mushrooms stuck with me and my Israeli couscous recipe is now a standby for healthy, simple weeknight dinners.

Loaded Quinoa Salad with Lemon Scallion Dressing
We make this recipe at our cafe. Gluten free, hearty, healthy and filling- it's all we want to eat on a beautiful spring day. You won't miss the meat in this vegan recipe. The lemon scallion dressing is zingy and bright- and a perfect springtime compliment to this hearty salad.

Roasted Rice Cakes with Scallion Oil
After a recent trip to China, I've been obsessed with crispy scallions on noodles, and have been inspired by a recipe from Fuchsia Dunlap's Every Grain of Rice. For this recipe, I experimented with using scallion-scented oil to roast fresh cylindrical rice cakes, a la David Chang's instructions in Momofuku. I can highly recommend this combo with kimchi and a fried egg.

Grilled Corn with Scallion Sauce
From the childhood favorites file. When she wasn't boiling fresh corn on the cob, my mother would grill it and slather this sweet-salty-oniony sauce all over it. Messy, but a darn tasty treat.
