Unlike red bean paste -- the smooth, mashed filling found in mooncakes, steamed buns, and mochi -- this is a red bean topping similar to the azuki bean topping used over Korean patbingsoo. The beans are largely intact, boiled tender in water and sugar, and preserved with syrup. It can be used to flavor ice cream or to top shaved ice (or both!)

Perfect Corn Soup

Sweet corn kernels are stripped of their cobs and blended with a lovely amount of homemade corn stock. After straining through cheesecloth, it is thickened on the stove like a custard. Served in the summer evenings or for lunch, I top mine with shaved summer truffle or top with fresh herbs.

The fresh ginger I’m finding at springtime farmers’ markets is new and juicy, like the spring garlic and onions. I’m sure this is going to be just one of many springtime stir-fries, but right now it’s a favorite. It’s inspired by an irresistible bunch of baby turnips I bought at a Sunday farmers’ market. The turnips were no bigger than a small round radish, but their greens were lush – I had about 6 cups of leaves after I’d stripped them from the stems. Sweet spring onions and green garlic contrast beautifully with the bitter flavor of the turnip greens.

Ramps on Toast with Poached Egg and Ajvar

When I opened up Bon Appetit's April issue and saw a beautiful, open-faced sandwich of sauteed ramps and a poached egg, I had to recreate my own version. This recipe is based on the BA sandwich but with key modifications -- namely, the addition of Serbian "ajvar." Ajvar is my absolute favorite condiment of all time and its smoky, sweet quality plays well with the charred ramps and the luxurious egg yolk of a perfectly poached egg. If you can't find ajvar, substitute goat cheese, harissa, tapenade, salsa, or other condiment of choice. Either way, try this while ramps are still available.
