Walnut Sponge Cake with Spiced Coffee Syrup (*gluten free option)
I came up with this recipe many years ago while living in Spain, where walnuts and other "frutos secos" take center stage during the holidays (walnuts are my mother's favorite). It also happens to be a very convenient way to use up old baguettes while making your family and friends very, very happy! There are two versions of this recipe, one with baking soda and one without. If you leave out the baking soda, you get a dense torte like cake, while the other results in a cake that is lighter and spongier. Both are delicious and very decadent. Pleas enjoy this cake fit for coffee and nut lovers the world around!

Hangover breakfast - Kimchi and Barley pancakes
I don’t know whether Kimchi actually cures the hangover or our Korean brains and stomachs are just programmed that way, but Kimchi and dishes with Kimchi are common hangover cure in Korea. (As you could probably guess, we eat Kimchi for almost anything). These pancakes are best eaten right away, but they also keep very well in the fridge for a few days. And let's be honest, when you wake up with a hangover feeling like a zombie, last thing you want is to cook. If you have a party weekend coming up, make these pancakes in advance and keep them in the fridge. All you have to do the next day is to warm them up and maybe top up with some fried eggs, (if you are well enough to handle fire). They might just save you from a world of pain.

Slow Baked Salmon with Basil Pesto and a Sea of Herb Oil
This is my favourite thing to serve in the spring and summertime. The low temperature makes the salmon incredibly tender with an almost creamy texture. The low temperature also helps keep the oil bright and perky green - perfect for mopping up with bread, tossing with boiled fingerlings, or pasta. Unlike grilled or seared salmon leftovers which turn inedibly dry in the fridge, this one stays moist and tender for say, a sandwich with some pickled fennel and Boston lettuce the next day.

Omelet Souffle
Much easier to prepare than a traditional souffle and still offers the fluffiness and lightness of it. I find this perfect for week-end brunch as it only takes a couple of minutes to prepare and 5 minutes to cook. Check out my Instagram for the video and you will see how easy it it!

Coconut Almond Cluster Granola
As terrific as homemade granola tastes, its texture often lacks the thick, crunchy clusters found in store-bought versions. This recipe is an exception, filled with crisp, sweet clumps of oats, coconut flakes and seeds. The secret is grinding a portion of the oats and coconut into flour, which helps bind the ingredients together. Feel free to mix up the spices, nuts and seeds to taste, and to add dried fruit or chocolate chips after it cools if you like. Granola is adaptable, so make it the way you like it. You can also cut the brown sugar in half. The granola will be less sweet and less cluster-packed but still quite satisfying.
