Kumquat-Earl Grey Marmalade

One of my favorite fall activities is apple picking and creating delicious recipes with the bounty I have picked throughout September and October. I have made a few different applesauce recipes in the past but thought I would try something a little different this year. I decided to add just a bit of honey in with the apples. The flavor really comes through without detracting from the delicious taste of the apples. This recipe yields a small quantity but it can be easily doubled or tripled.
Chocolate Shortbread
This recipe is originally adapted from an Avoca recipe. I replaced the unsalted butter with salted butter, upped the amount of confectioner's sugar and lessened the bake time by 30-40minutes. The best thing about this particular shortbread is its amazing texture, one that is so buttery and crumbly that it practically melts in your mouth. The shortbread is all at once both salty, sweet and rich-a veritable explosion of flavour which can be enhanced by a chocolate topping. They're incredibly easy to make and keep for at least a week in a sealed tub-perfect as a gift or to munch yourself!

Eleven Madison Park Granola
At the end of every meal at the restaurant Eleven Madison Park, in Manhattan, guests are presented with a small gift: a jar of granola for tomorrow’s breakfast. It is classic Alpine fare, taken straight from the chef Daniel Humm’s childhood in Zurich. The rolled oats are golden with brown sugar and a hint of maple, with salt and a wisp of olive oil for depth. Coconut chips and shelled pistachios provide a hint of whimsy, pumpkin seeds a leathery crunch. Dried sour cherries peek out from here and there, bits of softness to complete the whole. Best of all, the recipe is simple and bulletproof for anyone with a rimmed baking sheet and an oven, at least if you're careful with the kosher salt. Opinions vary greatly over the amount we call for: a whole tablespoon. For some, that is many teaspoons too many. (For many others it is absolutely perfect.) Season to taste.
