"Sweet and Bubbly"
This cocktail was inspired by the "Dark and Stormy", a delicious drink I had a few years ago in Bermuda (and which is made from ginger beer, dark rum and lime juice, I believe).

I came up with this to please my girl friends in the hot tub while dreaming of warmer weather...April, May? Remember it's cold where I live. This was spring in a glass. Refreshing, cool, and hydrating. The mint and lime zest make it. Make sure the melon (you could use any kind) is ripe and remove the seeds. We love this,enjoy!

Porto Spritzer
With some clients, we had gone for a porto tasting at The Château Frontenac's famous Champlain restaurant. It's host, Mr. Perreira, a legend in Quebec, was the one leading the tasting. This was his last drink... I was so impressed to attend such an event, and was even more so when we learned he had passed away a few weeks after. Cheers!

Status Quo
A friend of mine at the Reef in Washington, D.C. concocted this for me one night last spring and I've never looked back. Almost every time I order this, no matter where I go, I convert a skeptical bartender or fellow bar-goer. My buddy Patrick at Bar Pilar (also in Washington) ingeniously suggested I substitute ginger beer for the ginger ale; I would recommend the same if you happen to have that handy. But ginger ale works just as well. While I have specified Angostura bitters here, that just reflects my personal preference. There are many varieties of bitters available, but I find the Angostura really amplifies the citrus in the vodka and the ginger in the mixer. But whatever your choice, use it judiciously--a little goes a long way.

Lemon Lime Margaritas

This cocktail may just be my answer to a classic Manhattan--in more ways than one. I invented it to celebrate our move from the city to our cottage upstate in Sullivan County. It is a simple combination of only three ingredients but they add up to a wonderful balance of sweet, tart and smoky.

LIMONCELLO
I have given you my recipes for Nocino and French 44. So, I figured you might as well have my third favorite liqueur. I used to make this all the time...then everyone started making it. It is also available commercially, but I tried it and found it way to sweet. With this method you can control the sweetness, but, it is lemon based so you need sweetness. In the summertime limoncello tastes divine with a splash of sparkling water and ice.

Jalapeno-Infused or Serrano-Infused Tequila
This serrano or jalapeno-infused tequila recipe makes out-of-this-world margaritas! You can use any tequila you want as long as it's 100% agave. I like silver.

Bitter Apple Cocktail
There are only so many things you can do with apple butter, and I needed to think of all of them. That's because I made the slow-cooker apple butter recipe in the Ad Hoc cookbook, which makes six (delicious!) cups. I theorized that its sweet apple flavor and heavy spice—from cinnamon, allspice, and clove---would go well in a bitter, "serious" winter cocktail. The two spirits that the apple butter brought to mind were dark rum, for its syrupy sweetness, and rye whiskey, for its spice. I rounded out the cocktail with Laird's applejack, and (of course!) bitters. (Angostura would work well, but if you have another variety that is heavier on the sweet spices, go for that.) The apple butter adds body to the drink, and the flavor combination works well—a sort of cold, boozy mulled cider.

The Gin Hound
Using up a grapefruit and some left over lemon juice, I tripped over this tasty cocktail. Perhaps better suited for warmer months, it was a lovely acoutrement to my cooking adventures last night.

Bubbly Manhattan
As the name suggests, this is a variant on the traditional Manhattan, with a good, bitter IPA standing in for the traditional dash of bitters. The bubbles are just an added bonus. I don't shake the beer together with the whiskey and vermouth, because I it loses just a bit of that effervescence that you're adding the beer for -- so I pour it into the glass at the same time as straining the whiskey. I also think that an orange slice brings out the flavors of the whiskey better than the traditional maraschino cherry, and has the added benefit of looking like something that exists naturally on the planet Earth. You can up the ante a bit by substituting a sliced kumquat for the orange slice. - Collin
