Saucy Chicken

This recipe was handed down to me from a woman I used to baby sit for. She made her "Saucy Chicken" for us for dinner, and I immediately knew this wasn't a regular roasted chicken -- I was absolutely blown away and told her I needed the recipe. I add a lot more garlic to my version, and I always make sure to mince the garlic and add it to the olive oil bath. Once you make it, you will see why!
