Tart Cran-Apple Cider
Here is a recipe that embraces the bounties of the season, guaranteed delicious and believe it or not, nutritious! This drink includes the juice of tart apples; a potent deliverer of antioxidants, vitamin C and potassium! Tart, green apples have almost twice as much potassium as their red counterparts.

Easy Korean Chicken Wings
Simply to make. The only key is finding gochujang, a fermented red pepper paste that is ubiquitous in Korean cooking. Look for it at your local Asian store.

Ume Plum and Parmesan Green Bean Salad
In 2005 a friend of mine approached me asking me if I wanted to open a restaurant with her. She told me that she already found the space and had a vision but wanted a partner. She knew I had just graduated from Le Cordon Bleu Culinary School and that I was a yogi like her, who had a passion for health food. I know Le Cordon Bleu and Health don't exactly go together, but I love to cook gourmet and make it healthy. So while we never actually did open the restaurant together we did spend a lot of time creating recipes together for our restaurant. This was one of our favorites, and every time I make it for anyone they ask for the recipe!

The Grilled Lake House Burger
This is my burger mix. I bump up the umami just for good measure. It pays handsomely in the end. Make a build your own burger platter with lots of fresh stuff. I like Bibb lettuce, fresh cucumbers, pickles, fat slices of homegrown tomatoes, grilled red onion, cheeses of all kinds, and of course condiments like ketchup and whatnot. On a serious note, butter and grill those buns! It is the touch that makes all the difference.

Campari Shandy
I added a healthy splash of Campari, the bright red Italian aperitivo, and dropped in a wedge of lime to a Bitburger beer. Boom! We had our Summer cocktail recipe.

Watermelon Paloma
No, this isn't really a Paloma. It's missing the one key ingredient (grapefruit) that distinguishes a Paloma from most other tequila cocktails -- and instead calls on watermelon, that quintessential American summer treat, to do fruit duty.

Blueberry Fool with Yogurt
From Nigel Slater's Ripe (Ten Speed Press, 2012). Slater uses sugar; I prefer honey (and a tablespoon less). Use whichever appeals. He also suggests you chill the fool for an hour before serving; in case you don't have the time or patience, I've eaten it almost immediately after making and found it still irresistible.

Sweet & Spicy Grilled Fruit
Get your creative juices flowing with grilled fruit! In just minutes you can achieve sweet caramelization that’s a no-brainer for dessert, but don’t miss bringing them to the table as an appetizer or side dish, or saving them for breakfast the next day. It’s easy to mix and match flavors and fruits to add color and jazz to any meal.
Roasted Tomato Eggplant Melts
I savor this every time I have ripe tomatoes and eggplant which seems to happen almost every week starting in July. Its a perfect side dish or works as a light dinner on its own. The recipe is inspired by our community garden newsletter where gardeners are always looking for creative ways to use our produce. Be sure to use thin skinned eggplant which is more edible than its thicker skinned, more oblong cousin.

Roasted Tomato-Garlic Toasts
This "recipe"--more a guideline--came about as a way to get dinner on the table without fuss, and is an example of my exploration of roasting any and every kind of vegetable. The sweet flavor of best-quality late-summer tomatoes is concentrated and enriched by putting in a fairly hot oven and keeping it there till nicely browned. You can vary the quantities as you like. Not much more to be said--it's yummy, addictive and very popular around here.

Heirloom Tomato Bruschetta with Homemade Ricotta
A perfect Italian summer dish that takes advantage of the full flavors of summer vine ripe tomatoes.

Brad Spence's Salted Butter Semifreddo
This is an anytime, any season pantry frozen treat -- no ice cream machine required. Spence serves it year-round at Amis in Philadelphia, on blueberry tarts and in hot fudge sundaes, over spiced pound cake and yeasted waffles, and blended into maple milkshakes. Adapted from Amis Restaurant in Philadelphia, PA. Note: The eggs in this recipe aren't cooked. Just buy them from a trustworthy source -- Spence's come from Green Meadow Farm in Gap, PA -- or you can use pasteurized eggs.

HOME MADE POTOTES SALADE

Boozy Sorbet
This sorbet recipe is definitely purposefully extra boozy, unlike other recipes. The watermelon is wonderful in this vodka drink.

Stuffed Mushrooms
For some reason it seems as if all vegetarians are automatically required to like mushrooms because that is the considered “meat” for vegetarians. Unlike most vegetarians, I never liked mushrooms...unless they're stuffed with cheese...mmmm!
