Chocolate Pavlova With Chocolate Mousse
Most Pavlovas are white and fluffy nests filled with whipped cream and fruit. This is a dark and fudgy reinterpretation, with cocoa powder in the meringue and bittersweet chocolate in the mousse on top. What was once billowing and light becomes rich and intense. Because the cocoa powder has a small amount of fat in it, the meringue here will not hold its shape as well as a regular pavlova. So there’s no need to pipe out any fancy designs, which will melt in the oven. Instead, decorate the top with fresh berries or chocolate shavings to create a showstopper of a dessert. You can make the meringue and mousse a day ahead, but don’t assemble the dessert until just before serving.

Direct to the Oven Roasted Pork Chops
Using the Food 52's "All about pork chops" guide I picked some center cut pork hops for this recipe. Just 5 ingredients, a few minutes of dry brining and they go direct to the oven without the need to be seared on the stove. They turned out juicy and crisp thanks to some butter for self-basting and a high oven-short time cooking. With some chimichurri or pesto and a salad they make a great and easy weeknight dinner!

Date + Comté bites
Date and Comté Bites are my Ace-in-the-Hole when I'm scrambling, heading to a party, and need a dish that's delicious+simple. I strongly recommend sticking to salty, nutty cheeses like gruyere or comté to balance out the rich sweetness of the dates.

Almost Flourless Chocolate Cake
A 5-ingredient cake recipe that I received from my mom and have always loved this cake. It has the consistency of a mousse, but is really a cake. I think it is halfway between a soufflé and a cake. It has an airy texture and rich chocolate flavor without being too sweet…. so delicious! You could use a cup for cup flour to make this cake gluten-free.

Roasted Green Beans with Diced Dates, Garlic and Rosemary Marcona Almonds
Dates (when diced and cooked in oil) take on a cooked bacon/pancetta like texture. They are outrageously flavorful. Paired with green beans, garlic, Marcona almonds, and a touch of rosemary, this side dish is a perfect accompaniment to roasted pork or lamb. Or chicken. Or beef. Or quinoa. Or by themselves. If you can't find Marcona almonds, substitute slivered almonds and reduce almond quantity by half.

On Hand Chocolate Souffle
I googled a bunch of quick chocolate things and then used my back pocket knowledge to bake this. Me version requires an oven safe ramekin. If you don't have one on hand, I reccomend turning to google and conducting experiments like I did. Serves one hungry chef or some friends willing to share.

Butternut, lentil and cucumber salad
This salad is not well complicated (as usual) and savours magnificently in a lunch box. Think simply of making it the day before.

Roasted wine grapes, walnuts and olives
This is a winemaker's recipe that is an interesting appetizer or even wonderful dessert -- especially when there is some red wine still left on the table. I saw a version of this in Food & Wine Magazine back in the '80s and have since modified it to improve on the outcome.

Whiskey mable almonds
Roasting nuts is one of the simplest and easiets ways to be creative about your food. If you love your snacks as much as I do, it's also a really good oppotunity to cut down on your intake of salt. The salt/sugar/spicy balance is a pretty personal thing, but here's a good starting point.

Sweet Potato Pudding
Is this a recipe… I don't know. IT is so stupid simple with little effort and the results are amazing. Plus it's a great way to use up any left over baked sweet potatoes.

Golden Leek and Potato Soup
Most potato leek soups are smooth, creamy and decidedly on the richer side. This one doubles the ratio of leeks to potatoes, giving you something sweeter, chunkier and homier, brimming with soft pieces of potato and browned slivers of leeks. A tablespoon or two of heavy cream, drizzled into the soup just before serving, is an optional luscious touch.

Sweet potato, rice, peas and pomegranate salad
Perfect for lunch!

Brown Sugar Marshmallows
Soft, pillowy clouds of happiness with just the slightest nuttiness from the dark brown sugar. Adapted from @kitchn (How To Make Fluffy Marshmallows)- Great space to learn new things! This is a very simplified take on marshmallows and takes a slightly casual approach to marshmallow making! This recipe is so customizable! Add spices and cocoa powder to the dusting mixture or replace the vanilla extract with a cheeky liqueur like Frangelico! If I can do it so can you! @freakinthekitchento
