Whole Wheat Dough for Grilled Pizza

It was pretty groundbreaking when my mom first made pizza on the grill. It sounds like something you'd need a fancy pizza stone or brick oven to accomplish successfully, but with her method (she just flops the dough straight onto the hot rack), you can achieve both nice grill marks and a crisp crust worthy of your favorite pizza joint. The only requirements are a great dough recipe and a sturdy spatula. This dough was adapted from my spent grain bread recipe, so it's tried and true and promises to live up to your highest pizza expectations. You can easily multiply the recipe's ingredients in equal ratios to invite the entire neighborhood and throw a killer pizza party (we like to call it pizzapalooza.)

Anna Teresa Callen was a native-born Italian who lived her adult life in New York where she became renowned for teaching authentic Italian cooking. She was a dear friend of mine so I had many opportunities to not only enjoy her cooking, but also to cook with and learn from her. This is her pizza (and calzone) dough recipe. I've been making and teaching it for about 30 years. It never fails - not for me, and not in my cooking classes.

Pan con Tomate with Burrata

Pan con Tomate was a revelation to me the first time I had it. Sweet from the tomatoes, spicy from the raw garlic, and warmed by the toasted bread, it might be the meal I would choose to eat forever if I had to make that choice. This recipe is basic but I really like to add a wedge of burrata on top to make it truly over the top. It's simplicity at its best. And to top it all off, it only takes about 10 minutes to make from start to finish.

Serves 4 but can be easily multiplied
