Orange Vanilla Coconut Milk Ice Cream
It gets so hot in Dallas and I crave something cold and creamy, but I'm not supposed to eat dairy or sugar so I came up with this for a treat. It tastes like a Creamsicle and could be frozen in a mold if you would like. I know it's not technically ice cream and gets a little icy, but it can't be beat it for fast, tasty, and unlimited flavor variation potential.

Fennel and grapefruit salad
This isn't much of a "recipe", but I've made this salad 3 times this week and it's so delicious and refreshing that it never gets old. If you've never eaten this you must try it and you might be convinced this is the best way to eat fennel. I'm sure that this is a classic combo and similar recipes are out there but this is how I make it with the least amount of effort.
